  • 2 Tbsp. lemon juice
  • 1 Tbsp. vanilla extract
  • pinch of salt

Instructions

To Make The Graham Cracker Crust:

  1. Stir graham cracker crumbs and melted coconut oil or butter together in a small bowl until thoroughly combined. Evenly distribute 2 loosely-packed tablespoons of this crust mixture into the bottom of each jar or serving dish. Use your fingers or a spoon to gently but firmly pack down the crust, creating a solid base for your cheesecake.

To Make The Cheesecake Filling:

  1. Place all the cheesecake filling ingredients (low-fat cream cheese, strained low-fat vanilla Greek yogurt, honey, lemon juice, vanilla extract, and a pinch of salt) into a food processor, blender, or large mixing bowl. Pulse or blend until the mixture is completely smooth and well combined. If using a mixer, beat on medium speed, scraping down the sides of the bowl once or twice to ensure all ingredients are thoroughly incorporated.
