Maple Old Fashioned Cocktail Drink Recipe - Bourbon, Bitters, Orange Peel, Maple Syrup

The Ultimate Maple Old Fashioned Cocktail Recipe

For connoisseurs of classic cocktails, the Old Fashioned stands as an undisputed icon. Its simple elegance and robust flavor profile have captivated generations of enthusiasts. But what if we told you there’s a subtle twist that elevates this timeless drink to new heights? Enter the Maple Old Fashioned, a rendition that swaps traditional sugar for the nuanced, natural sweetness of maple syrup, creating a cocktail that is both familiar and excitingly new.

A few years ago, we decided to break away from the conventional teaspoon of granulated sugar or simple syrup in our Old Fashioned cocktails. Our quest for a more refined sweetener led us to maple syrup, and frankly, there’s been no looking back. We’ve become true devotees of the “Team Maple Syrup” approach, especially when crafting this particular classic cocktail.

The beauty of the Old Fashioned lies in its core spirit: bourbon. Bourbon, by its very nature, possesses a sweeter, richer profile compared to other whiskeys. This inherent sweetness means it doesn’t require a heavy hand with added sugars. Instead, a delicate hint of maple syrup is all that’s needed to enhance its character. Maple syrup introduces a depth of flavor that granulated sugar simply cannot match. Its notes of caramel, vanilla, and slight earthiness perfectly complement the warm, oaky, and often caramel-infused undertones found in quality bourbon. This harmonious blend creates a cocktail that feels more integrated and sophisticated, allowing the bourbon to truly shine while adding an intriguing layer of complexity.

Beyond the bourbon and maple, a few dashes of aromatic bitters introduce balance and structure, preventing the drink from becoming overly sweet. A bright, zesty squeeze of fresh orange peel awakens the senses with its invigorating citrus oils, adding a crucial aromatic dimension. And for that final touch of indulgence? A glistening Luxardo cherry, offering a burst of sweet-tart flavor and a beautiful visual appeal. Together, these elements combine to form a perfectly balanced, utterly delightful Old Fashioned that is ideal for any occasion, from a cozy autumn evening to a sophisticated gathering.

Maple Old Fashioned Cocktail Drink Ingredients - Bourbon, Bitters, Maple Syrup, Orange

Essential Ingredients for Your Maple Old Fashioned Cocktail:

Crafting a truly exceptional Maple Old Fashioned begins with selecting quality ingredients. Here’s a detailed look at what you’ll need to create this maple-sweetened masterpiece:

  • Whiskey (2 ounces): The foundation of any Old Fashioned. While traditional recipes often specify bourbon, rye whiskey is also an excellent choice, offering a spicier, drier counterpoint to the maple’s sweetness. For bourbon, we frequently reach for reliable brands like Bulleit Bourbon or Buffalo Trace, both known for their balanced flavor and smoothness. When choosing, look for bourbons with notes of vanilla, caramel, and oak, as these will beautifully marry with the maple. If opting for rye, select one that offers a good balance of spice without overwhelming the other components.
  • Bitters (3-4 dashes): Bitters are the “spice rack” of cocktails, adding complexity and depth. Angostura Aromatic Bitters are the gold standard for Old Fashioneds, offering a distinct blend of herbs, spices, and roots that provide crucial balance. Their slightly bitter, earthy notes cut through the sweetness and highlight the whiskey’s profile. Don’t be shy with the dashes – 3 to 4 is usually perfect for a single serving, but feel free to adjust to your preference. Other bitters, like orange bitters, can also be experimented with for a different aromatic twist.
  • Pure Maple Syrup (1/2 teaspoon): This is where our Old Fashioned truly differentiates itself. It’s imperative to use pure maple syrup, not pancake syrup or artificial maple-flavored sweeteners. The quality of your maple syrup directly impacts the cocktail’s flavor. We prefer a Grade A Dark, Robust Taste (formerly Grade B) maple syrup for its richer, more pronounced flavor, which complements the bourbon beautifully. However, a lighter amber syrup will also work, providing a more delicate sweetness. A half-teaspoon is generally sufficient to sweeten without overpowering the bourbon, allowing its natural character to shine through.
  • Fresh Orange Peel: The aromatic oils from a fresh orange peel are non-negotiable. They add a vibrant, zesty fragrance and a subtle citrus note that brightens the entire drink. You’ll need a fresh orange and either a vegetable peeler or a sharp paring knife to slice off a generous strip of peel. The goal is to get the peel without too much of the white pith, which can be bitter.
  • Ice: While any ice will chill your drink, large, dense ice cubes or a single large ice sphere are ideal. Larger ice melts slower, diluting your cocktail gradually and preserving its integrity and flavor for a longer time. We love using cubed trays that produce substantial ice, perfect for this cocktail.
  • (Optional) Luxardo Maraschino Cherry (1): For a truly elevated experience, forego the bright red, artificially flavored maraschino cherries found in the fruit aisle. Instead, invest in a jar of Luxardo Maraschino Cherries. These are a bit of a splurge, but they are a million times superior. Made from sour Marasca cherries steeped in a rich, sweet syrup, they offer a complex, dark cherry flavor that perfectly complements an Old Fashioned. They come in a thick syrup, which we recommend lightly tapping or rinsing off the cherry before adding it to avoid overly sweetening your cocktail.

You will also need a few basic bar tools:

  • Vegetable Peeler (or a Paring Knife): A Y-peeler is particularly effective for cleanly removing strips of orange peel, minimizing the bitter white pith.
  • Cocktail Spoon: A long-handled bar spoon is helpful for stirring and chilling the cocktail effectively. If you don’t have one, a regular spoon will suffice.
  • Rocks Glass: Also known as an Old Fashioned glass or a tumbler. This short, wide glass is the traditional vessel for this cocktail, allowing ample space for ice and garnish.

How to Craft Your Perfect Maple Old Fashioned Cocktail:

Making a Maple Old Fashioned is a simple yet elegant process that results in a wonderfully complex drink. Follow these straightforward steps to create your own:

  1. Prepare Your Orange Peel: Begin by carefully cutting a 2- to 3-inch-long piece of orange peel. The goal is to get a strip of the brightly colored zest with as little of the white pith as possible, as the pith can introduce bitterness. A vegetable peeler or a sharp paring knife works best for this. Once you have your peel, gently rub the pulp-side (the inner white side) of the peel around the rim of your chosen cocktail glass. This action coats the rim with aromatic citrus oils, enhancing the sensory experience with every sip. Set the peel aside; it will be used for garnishing later.
  2. Combine the Base Ingredients: Into your prepared rocks glass, add the 2 ounces of bourbon (or rye), 3 to 4 dashes of Angostura aromatic bitters, and the 1/2 teaspoon of pure maple syrup. These three ingredients form the core flavor profile of your Old Fashioned. Use a cocktail spoon (or any spoon with a long handle) to gently stir these ingredients together for about 10-15 seconds. This initial stir helps to thoroughly combine the maple syrup with the bourbon and bitters before chilling, ensuring a uniform sweetness and flavor throughout the drink.
  3. Add Ice and Chill: Now, add your ice to the glass. For optimal chilling and minimal dilution, use large ice cubes or a single large ice sphere. Once the ice is in, stir the drink again with your spoon. This time, the purpose of stirring is primarily to chill the cocktail down to the perfect temperature and to achieve a slight, controlled dilution, which helps to open up the flavors of the bourbon. Stir for about 20-30 seconds, or until the outside of the glass feels noticeably cold. The aim is a well-chilled, not watery, drink.
  4. Garnish and Serve Immediately: Before serving, take the orange peel you set aside earlier. Hold it above the glass and give it a good twist, bending it sharply between your fingers. You should see a fine mist of aromatic oils spraying into the drink. This technique, known as “expressing” the oils, releases the most potent citrus fragrance and flavor directly into your cocktail. After twisting, gently tuck the orange peel into the drink. If you’re using a Luxardo maraschino cherry, gently tap off any excess syrup from the cherry and drop it into the glass. Serve your exquisite Maple Old Fashioned immediately and enjoy its rich, complex flavors.

Why the Maple Old Fashioned Stands Out

The Old Fashioned has a storied history, dating back to the early 19th century. Originally known as a “Whiskey Cocktail,” it was a simple concoction of spirits, sugar, water, and bitters. Over time, it evolved, with different spirits and sweeteners coming into vogue. The modern Old Fashioned typically features bourbon or rye, a sugar cube or simple syrup, bitters, and an orange twist. Our maple rendition respects this classic lineage while infusing it with a distinctly modern, natural twist.

Maple syrup’s unique chemical composition allows it to dissolve effortlessly into cold liquids, eliminating the need for creating a separate simple syrup or muddling a sugar cube. This not only streamlines the preparation process but also ensures a smooth, consistent sweetness from the very first sip. Its complex flavor profile, with hints of caramel, vanilla, and subtle woodiness, is a natural pairing for bourbon’s own aged characteristics. Unlike the sometimes sharp, one-dimensional sweetness of granulated sugar, maple syrup offers a mellow, rounded sweetness that never dominates but rather elevates the bourbon’s inherent notes.

Choosing a good quality bourbon is paramount. While some might argue for an expensive bottle, many mid-range bourbons like Bulleit or Buffalo Trace offer incredible value and flavor that stand up beautifully in an Old Fashioned. They provide the right balance of sweetness, spice, and body without being overly aggressive, allowing the maple and bitters to play their supporting roles perfectly. For those who prefer a spicier kick, rye whiskey introduces a peppery note that creates a fascinating contrast with the maple’s sweetness.

The bitters, often underestimated, are crucial. Angostura bitters provide a symphony of flavors – gentian root, cinnamon, clove, and other secret botanicals – that cut through the sweetness and add a layer of intriguing bitterness and aromatic depth. They act as a bridge between the spirit and the sweetener, harmonizing the entire drink. Without them, the cocktail would feel flat and less complex.

And let’s not forget the orange peel. The act of expressing the oils is not just for show; it releases a burst of fresh citrus essence that perfumes the drink. This aromatic component is vital, enhancing the drinking experience before the glass even touches your lips. It’s a testament to the Old Fashioned’s mastery of balancing flavor with aroma.

Description

My favorite way to make an old fashioned cocktail — good-quality bourbon and bitters, a hint of maple syrup, and a generous twist of orange peel. Plus maybe a Luxardo cherry on top.

Ingredients

  • 2 ounces bourbon or rye
  • 3-4 dashes Angostura aromatic bitters
  • 1/2 teaspoon maple syrup
  • orange peel
  • ice
  • (optional): 1 Luxardo maraschino cherry*

Instructions

  1. Use a vegetable peeler or knife to carefully cut a 2- to 3-inch-long piece of orange peel. Run the pulp-side of the peel around the rim of the cocktail glass, then set the peel aside for later.
  2. Add the bourbon, bitters, and maple syrup to the glass, and briefly stir to combine. Add the ice, then briefly stir the drink one more time to mix and chill.
  3. Give the orange peel a good twist above the glass to release its oils, then tuck it into the drink. Add a maraschino cherry (if using) and serve immediately.

Notes

*Luxardo cherries come with a pretty thick syrup. So if you don’t want to overly sweeten your cocktail, I recommend tapping or rinsing off the excess syrup before adding the cherry to your cocktail.

Enhancing Your Cocktail Experience

Beyond the core recipe, there are several ways to fine-tune your Maple Old Fashioned to suit your palate or occasion. Consider the type of maple syrup; a darker, more robust syrup will impart a richer, more pronounced maple flavor, while a lighter amber syrup will offer a more subtle sweetness. Experimenting with different grades can yield surprisingly varied results.

For those who enjoy a slightly less potent drink, a splash of high-quality club soda or sparkling water can be added after the ice and final stir. This creates a longer, lighter version of the Old Fashioned, perfect for warmer evenings or when you prefer a less intense spirit forward cocktail. However, true purists will often argue that an Old Fashioned should remain undiluted beyond what the ice provides.

Another area for exploration is bitters. While Angostura is classic, orange bitters can be an excellent addition, particularly if you enjoy a brighter, more citrus-forward profile. A dash of both Angostura and orange bitters can create a complex, multi-layered aromatic experience. Spice bitters, like cardamom or pecan, could also introduce intriguing new dimensions for the adventurous palate.

Garnishing also offers creative avenues. While the orange peel is traditional, a lemon peel can offer a sharper, more tart aroma that contrasts beautifully with the maple. Some mixologists even enjoy smoking the glass with wood chips before mixing the drink, adding a subtle campfire aroma that pairs exquisitely with bourbon and maple, especially in colder months.

For entertaining, preparing a batch of the bourbon, bitters, and maple syrup mixture ahead of time can be a fantastic time-saver. Simply combine the liquid ingredients in a pitcher, chill it, and then pour individual servings over ice, garnishing each cocktail fresh. This ensures consistency and efficiency, allowing you to enjoy your guests’ company rather than being stuck behind the bar.

The Maple Old Fashioned is more than just a drink; it’s an experience. It’s a celebration of quality ingredients, timeless tradition, and a subtle innovation that truly enhances a beloved classic. Whether you’re a seasoned cocktail enthusiast or new to the world of whiskey drinks, this recipe offers a delicious and satisfying journey for your taste buds. So, gather your ingredients, take a moment to appreciate the craft, and enjoy the rich, harmonious flavors of your homemade Maple Old Fashioned.

Cheers, everyone! May your sips be smooth and your moments memorable.
