Cajun Shrimp Alfredo Casserole: A Taste of Home, Inspired by Barcelona Adventures
¡Hola from sunny Barcelona! It’s hard to believe, but today marks two full weeks since we officially moved to Spain. And honestly, you guys, we are completely, utterly, and absolutely captivated by this incredible city. It truly feels magical—vibrant, exciting, wonderfully quirky, and surprisingly nuanced. Around every corner, there’s a new discovery, a rich tapestry of cultures, and an undeniable pulse that makes Barcelona feel incredibly alive. We’re doing our best to soak up every single minute of it.
Yet, even after two weeks, there’s a constant, delightful push and pull between feeling like we’re on an extravagant, never-ending vacation and the comforting realization that this is actually our new home. It’s a fascinating dichotomy!
About half the time, the novelty still shines brightly. We find ourselves happily wandering down charming, unfamiliar streets, using Yelp to discover hidden culinary gems, and taking long, contemplative strolls along the breathtaking beaches—oh, the beaches here are simply divine! The constant murmur of different languages around us, the enchanting twinkle lights, and festive banners strung across every avenue make it feel like a perpetual celebration. But then, in equal measure, this bustling city has already begun to feel wonderfully familiar. It’s astonishing how quickly routines form and places become beloved. Waking up to the gentle cooing of neighborhood pigeons in our quaint little apartment, navigating the winding routes to our favorite market, coffee shop, and yoga studio by heart, and even receiving a friendly wave from Alejandro at the wine shop as we take our pups for a walk—these small moments truly ground us. In such a short time, Barcelona has embraced us, and it already feels like we belong.
Without a doubt, two things have accelerated this feeling of truly “living here”: having our beloved dogs by our side, and, perhaps most profoundly, the simple act of *cooking* in our new home. For me, there’s an inherent grounding power in visiting a local market, bringing home fresh ingredients, and transforming them into a homemade meal. It’s an ancient ritual that transforms any foreign space into a sanctuary. Our tiny kitchen here may still be minimalist, boasting only a single sauté pan and saucepan that came with the apartment. However, I’m thrilled to report that our Instant Pot just arrived from Spanish Amazon, and Barclay and I have already embarked on many fun cooking dates, putting our limited, yet cherished, tools to good use.
Among our favorite culinary creations so far, one dish stands out as a true triumph: this zesty, creamy, and utterly comforting Cajun Shrimp Alfredo Casserole. It’s a dish that perfectly encapsulates our journey—a blend of new discoveries and familiar comforts.
The Unexpected Journey to a Cajun Casserole in Spain
You might be wondering, “Cajun food… in Barcelona? How did that happen?” Well, it’s quite a story! On the day we decided to cook this particular dish, we ventured out to a charming little local market overflowing with vibrant bell peppers, succulent fresh shrimp, and, of course, an abundance of rice. We excitedly filled our baskets, envisioning a delicious meal.
However, upon returning to our new kitchen, we had a small, yet significant, realization: we hadn’t yet acquired a full collection of spices for our Spanish pantry. In the chaos of moving internationally, some essentials had slipped our minds. Thankfully, I had the foresight to pack a few of my absolute favorite, and potentially hard-to-find, spices from the States in my suitcase. Among these treasured items was a trusty tin of Old Bay seasoning. And just like that, our culinary destiny was sealed—Cajun food it was!
The improvisation didn’t stop there. Our apartment’s small sauté pan, while cute, proved to be far too modest to accommodate the generous amounts of rice, vibrant veggies, and plump shrimp we had prepared. This minor setback, however, sparked a stroke of genius. Instead of trying to force everything into the inadequate pan, I whipped up a simple, creamy Cajun Alfredo sauce, combined all the ingredients in a large baking dish, and popped it into the oven to finish cooking as a casserole. Once it emerged, golden and bubbling, we garnished it with generous sprinkles of fresh Parmesan, a scattering of bright parsley, and a squeeze of fresh lemon juice. What began as a series of kitchen compromises turned into a total comfort food *win* that has quickly become a staple.
Why This Cajun Shrimp Alfredo Casserole Is Your Next Favorite Meal
Honestly, it’s hard to imagine how you could go wrong with this delightful creation. It’s a harmonious blend of bold flavors and comforting textures: plump, zesty shrimp, tender-crisp bell peppers and okra, a creamy (and delightfully lightened-up) Cajun Alfredo sauce, all mingled with satisfyingly hearty rice. It’s a win-win-win situation in every single bite! The vibrant colors alone make it an enticing dish, but the depth of flavor is what truly sets it apart. The Old Bay seasoning infuses every component with that signature, warm Cajun spice, while the Alfredo sauce provides a luxurious, velvety backdrop that balances the zest perfectly.
Beyond its incredible taste, this casserole offers remarkable versatility and convenience, making it an ideal choice for a variety of occasions. If you’re planning to cook for a larger crowd, or simply want to get ahead of the game, this dish can be effortlessly prepared a few hours in advance. Just assemble it in your baking dish, cover, and refrigerate. Then, when you’re ready to serve, simply pop it into the oven until it’s heated through and bubbling. This make-ahead capability makes it a lifesaver for busy weeknights or a stress-free option when entertaining guests.
Moreover, this recipe is incredibly adaptable to different tastes and dietary preferences. While shrimp shines as the star, don’t hesitate to experiment with other proteins. Succulent chicken, smoky sausage, or even a combination of both would work beautifully in place of (or alongside) the shrimp, adding their own unique textures and flavors to the casserole. You could also easily boost the vegetable content by adding spinach, mushrooms, or corn for an extra layer of nutrition and taste. It’s a recipe that encourages creativity and customization, ensuring it can become a regular favorite in any household.
So, here’s to finding comfort in food, no matter where in the world your adventures take you. May this Cajun Shrimp Alfredo Casserole bring a little piece of zesty, creamy warmth to your table, just as it has to ours here in Barcelona.
Enjoy, everyone!

Scale
Cajun Shrimp Alfredo Casserole Ingredients:
- 2 pounds raw, peeled, large shrimp (tails on or off)
- Kosher salt and freshly-cracked black pepper
- 2 tablespoons extra virgin olive oil (or butter), divided
- 2 large bell peppers, cored and thinly sliced (we used one red, one yellow)
- 1 small red onion, peeled and thinly sliced
- 2 cups sliced okra, fresh or frozen
- 2 cloves garlic, minced
- 5 cups cooked rice
- 1 batch alfredo sauce (recipe below)
- Toppings: plenty of fresh lemon slices/wedges, finely-chopped fresh parsley, extra Parmesan cheese
Alfredo Sauce Ingredients:
- 1 tablespoon extra virgin olive oil or butter
- 4 cloves garlic, pressed or finely-minced
- 3 Tablespoons all-purpose flour
- 1 cup chicken or vegetable stock (or you can use milk instead)
- 1 cup milk (we used 2%)
- 3/4 cup freshly-grated Parmesan cheese
- 1 tablespoon Old Bay seasoning
- 1/4 teaspoon Kosher salt + 1/4 teaspoon freshly-cracked black pepper
Instructions
To Make The Cajun Shrimp Alfredo Casserole:
- Preheat your oven to 350°F (175°C).
- Season the raw shrimp generously on both sides with a few pinches of Kosher salt and freshly-cracked black pepper. Heat 1 tablespoon of olive oil (or melt butter) in a large sauté pan over medium-high heat. Add the seasoned shrimp to the pan and sauté for about 5 minutes, stirring and flipping occasionally, until the shrimp turn pink and are cooked through. Using a slotted spoon, transfer the cooked shrimp to a clean plate and set aside.
- In the same sauté pan, heat the remaining 1 tablespoon of olive oil (or melt more butter). Add the thinly sliced bell peppers and onion, and cook for about 5 minutes, stirring occasionally, until they begin to soften. Stir in the sliced okra and minced garlic, and continue to cook for an additional 3 minutes, stirring frequently, until fragrant.
- In a large mixing bowl, combine the cooked shrimp, the sautéed veggie mixture, the cooked rice, and the prepared Alfredo sauce (from the recipe below). Toss everything together gently until all ingredients are evenly coated and well combined. Pour the mixture into a 9 x 13-inch baking dish and spread it out evenly.
- Bake uncovered for 15 minutes, allowing the flavors to meld and the casserole to heat through. Remove the casserole from the oven and serve immediately, garnished with your desired toppings such as fresh lemon slices or wedges, finely-chopped fresh parsley, and extra Parmesan cheese.
To Make The Alfredo Sauce:
- Heat 1 tablespoon of olive oil (or melt butter) in a large sauté pan over medium-high heat. Add the minced garlic and sauté for one minute, stirring occasionally, until it becomes fragrant. Sprinkle the flour over the garlic and stir to combine, creating a roux. Continue to sauté for an additional minute, stirring occasionally, to cook out the raw flour taste.
- Slowly pour in the chicken or vegetable broth, whisking continuously to ensure a smooth consistency and prevent lumps. Whisk in the milk until thoroughly combined, then bring the mixture to a gentle simmer (be careful not to let it boil vigorously). Reduce the heat to medium-low and cook for an additional minute, stirring, until the sauce has thickened to your desired consistency. Finally, stir in the freshly-grated Parmesan cheese, Old Bay seasoning, Kosher salt, and freshly-cracked black pepper. Continue stirring until the cheese has completely melted into the sauce. Remove from heat and set aside until ready to combine with the casserole ingredients.
