This classic bangers and mash recipe is the ultimate British pub food experience, featuring succulent golden sausages, creamy mashed potatoes, and a rich, savory onion gravy that ties it all together for a truly comforting meal.

Every December, my digital photo archives resurface memories of a truly magical Christmas spent in England many years ago, celebrating the wedding of dear friends. Beyond the joyous occasion, that trip left an indelible mark on me, largely due to my introduction to the vibrant and cozy world of British pub culture. I recall seeking refuge from the crisp winter chill in charming, historic taverns, warming my hands around a frothy pint or a comforting mug of mulled wine. It was an experience steeped in lively folk music, cheerful chatter, and, of course, the country’s famously hearty comfort foods. Among these culinary discoveries, my very first taste of classic bangers and mash remains a cherished memory. It was truly a special and delicious journey that ignited a lasting love for this iconic dish. ♡
Bangers and mash, at its heart, is the epitome of British comfort food — simple, humble, yet profoundly satisfying and bursting with flavor. The dish traditionally features plump, savory sausages, often pork, which are cooked until beautifully browned and slightly crispy. These are then nestled atop a warm, inviting bed of velvety, buttery mashed potatoes, creating a delightful textural contrast. The pièce de résistance is a generous cascade of rich, deeply flavored onion gravy, often accompanied by a sprinkling of sweet green peas for a touch of freshness and color. It’s a testament to the power of simple ingredients combined with care, proving that the sum is indeed greater than its individual parts. On any cold day, whether battling a winter’s chill or simply seeking solace, a plate of bangers and mash is guaranteed to warm you from the inside out, providing a hug in food form.
While the classic rendition is, in my humble opinion, exceptionally hard to beat, this dish offers wonderful flexibility for customization. You can easily adapt it to include additional vegetables, introduce different seasonings, or even modify it to be gluten-free or vegetarian using your favorite plant-based sausages. However, for those new to the experience or seeking an authentic taste of British tradition, I wholeheartedly recommend starting with this timeless recipe. The next time you find yourself yearning for a truly comforting and flavorful meal, pick up some quality sausages and give this classic bangers and mash a try. You won’t be disappointed.

Mastering Bangers and Mash: Key Ingredients
Crafting the perfect plate of bangers and mash begins with understanding the essential ingredients and how they contribute to the dish’s beloved flavor profile. Here’s a closer look at what you’ll need to create this classic British meal:
- Sausages: The heart and soul of this dish, juicy, savory sausages are paramount. Traditionally, British-style pork sausages, often called “bangers” due to their tendency to burst when cooked rapidly during wartime rationing, are preferred. Look for good quality, coarsely ground pork sausages with a high meat content. However, feel free to choose any variety you love best, whether it’s beef, chicken, or a robust plant-based alternative. The key is to select sausages that will brown beautifully and provide ample flavor.
- Onions: Thinly sliced white or yellow onions form the aromatic, deeply savory base for our rich gravy. When slowly sautéed, they caramelize slightly, developing a sweet depth that is crucial for a truly authentic onion gravy. Don’t rush this step, as well-cooked onions are fundamental to the gravy’s character.
- Butter and All-Purpose Flour: These two ingredients combine to create a classic roux, which acts as the thickening agent for the gravy. The butter provides richness and helps to cook out the raw flour taste, while the flour ensures a smooth, silky consistency, transforming the liquid base into a luxuriously thick sauce.
- Dry White Wine: A splash of dry white wine is used to deglaze the pan after cooking the onions, lifting all those delicious browned bits (fond) from the bottom. This adds a subtle hint of acidic tang and complexity to the gravy, elevating its overall flavor. If you prefer to avoid alcohol, a good quality vegetable stock with a teaspoon of apple cider, white wine, or sherry vinegar makes an excellent substitute.
- Beef Stock: The foundation of a robust and flavorful gravy. Opt for a high-quality beef stock or broth, as its depth of flavor will significantly impact the final taste of your gravy. It contributes rich, umami notes that perfectly complement the sausages and potatoes.
- Essential Seasonings: We’ll build on the flavor profile with a classic combination: garlic powder for an earthy warmth, balsamic vinegar for a touch of sweet acidity and depth, and Dijon mustard for a subtle piquant kick that cuts through the richness. Fine sea salt and freshly-ground black pepper are added to taste, ensuring perfect balance.
- Fresh Parsley: A final garnish of finely-chopped fresh parsley adds a vibrant burst of color and a touch of herbaceous freshness, brighting up the rich flavors of the dish. It’s a simple addition that makes a big difference.
- Creamy Mashed Potatoes and Peas: No bangers and mash is complete without the traditional accompaniments. I highly recommend serving this dish with a generous portion of perfectly creamy mashed potatoes – my go-to mashed potatoes recipe never fails. Sweet green peas offer a welcome pop of color and a contrasting sweetness that balances the savory elements.

Delicious Recipe Variations and Customization Ideas
While the traditional bangers and mash holds a special place, this versatile dish lends itself beautifully to creative variations. Feel free to experiment with these fun ideas to tailor the recipe to your taste or dietary preferences:
- Enhance with Extra Vegetables: Boost the nutritional value and flavor by incorporating more vegetables. Sauté sliced mushrooms, leeks, or bell peppers alongside the onions when preparing the gravy. For the mash, consider mashing cooked parsnips, cauliflower, or carrots directly into the potatoes for added sweetness, texture, and vitamins.
- Swap Wine for Beer in Gravy: For a deeper, earthier flavor that wonderfully complements the sausages, try using your favorite dark beer (like a stout or ale) in place of the dry white wine when deglazing the pan for the gravy. This introduces a robust maltiness that many find appealing.
- Sweet Potato Mash: For a delightful twist and a touch of natural sweetness, substitute traditional Russet or Yukon Gold potatoes with sweet potatoes when making your mash. This creates a vibrant, slightly sweeter backdrop for the savory sausages and gravy.
- Indulge in Cheesy Mash: Elevate your mashed potatoes to a new level of decadence by stirring in a generous amount of freshly-shredded sharp cheddar, Gruyere, or Parmesan cheese. The melting cheese adds incredible flavor and creaminess, making the mash even more comforting.
- Make it Gluten-Free: Adapting this recipe for a gluten-free diet is simple. Instead of using all-purpose flour for the roux, thicken the gravy with a cornstarch slurry. Whisk together equal parts cold water and cornstarch, then gradually add this mixture to the simmering gravy, stirring constantly, until it reaches your desired thickness.
- Craft a Vegetarian Version: To make this classic dish suitable for vegetarians, the primary changes involve the sausages and the stock. Opt for your favorite plant-based sausages, which are widely available in various flavors and textures. For the gravy, substitute beef stock with a rich vegetable broth, ensuring a savory and satisfying vegetarian meal.
- Herbal Infusion: Add fresh or dried herbs to your gravy for an extra layer of aroma. Thyme, rosemary, or bay leaves can be simmered with the stock and then removed before serving, imparting an herbaceous depth.
- Spice it Up: For those who enjoy a little heat, a pinch of red pepper flakes or a dash of hot sauce can be added to the gravy during the simmering process, giving it a subtle kick.

Description
This classic bangers and mash recipe is cozy British pub food at its best, featuring golden sausages and creamy mashed potatoes all topped with a rich and savory onion gravy.
Ingredients
- 1 tablespoon olive oil
- 8 sausages (pork, beef, chicken or plant-based)
- 2 to 4 tablespoons butter
- 2 medium white or yellow onions, sliced
- 1/4 cup all-purpose flour
- 2/3 cup dry white wine
- 2 cups beef stock
- 2 teaspoons garlic powder
- 1 teaspoon balsamic vinegar
- 1 teaspoon Dijon mustard
- fine sea salt and freshly-ground black pepper
- finely-chopped fresh parsley, for garnish
- mashed potatoes and peas, for serving
Instructions
- Prepare mashed potatoes. Make one batch of mashed potatoes.
- Cook the sausages. Meanwhile, heat the oil in a large sauté pan over medium-high heat. Add the sausages in an even layer and cook, turning occasionally, until as browned as possible on all sides and cooked through. (Cooking time will depend on the type of sausages. If using a leaner variety of sausages, you may need to add extra oil.) Transfer the sausages to a clean plate and set aside.
- Begin the gravy. Reserve about 2 tablespoons of the sausage grease in the pan and discard the rest. (Or if there is not enough grease remaining, replace that amount with extra butter.) Add 2 additional tablespoons butter along with the onions and sauté for 4 minutes or until mostly softened. Add the flour and sauté for 1 minute, stirring occasionally.
- Simmer. Add the white wine and use a wooden spoon to lift up the browned bits stuck to the bottom of the pan. Gradually stir in the beef stock until combined, then stir in the garlic powder, balsamic and Dijon. Continue cooking for 1-2 more minutes, until the gravy reaches a simmer and thickens. If the gravy seems too thick, feel free to thin with more beef stock. Taste and season with salt and pepper, and/or additional balsamic or Dijon as needed.
- Serve. Serve the sausages over mashed potatoes with a generous ladle of gravy, along with a side of sweet peas if desired. Enjoy!
