  • 1/4 cup dry white wine (or chicken or vegetable stock)
  • 2 tablespoons white balsamic vinegar (or traditional balsamic vinegar*)
  • 1/2 cup toasted pine nuts
  • toppings: lots and lots of freshly-grated parmesan, chopped fresh basil (optional), diced cooked bacon (optional)

  1. Begin by cooking your chosen pasta al dente. Use a large stockpot filled with generously salted water, following the package directions. This ensures the pasta absorbs flavor from within, an essential step for a truly delicious dish. Once cooked to your desired al dente texture, drain the pasta and set it aside, reserving about ½ cup of the starchy pasta water if desired for later use in adjusting the sauce consistency.
