The Ultimate Classic Lasagna: A Recipe You’ll Cherish
Welcome, fellow food lovers! Today, we’re embarking on a culinary journey to the heart of Italy with a dish that needs no introduction: lasagna. But not just any lasagna—this is *the* life-changing lasagna recipe you’ve been searching for. Get ready to bookmark this one, because it’s destined to become a beloved classic in your kitchen.
For years, I confess, I steered clear of making homemade lasagna. The thought of all that effort for a dish that often fell flat, or as my partner Barclay would say, was merely “whelming” – not overwhelming, not underwhelming, just… okay – didn’t inspire me. When you dedicate more than thirty minutes to a recipe, it absolutely needs to be extraordinary, right? Most homemade versions I tried simply didn’t deliver that knock-your-socks-off experience.
However, a memorable trip to Italy, particularly savoring authentic dishes along the stunning Amalfi Coast, completely shifted my perspective. It proved that truly exceptional lasagna is indeed worth every bit of extra effort. Inspired and determined, I returned home and embarked on an intensive lasagna recipe-testing spree. After numerous batches, countless adjustments, and relentless pursuit of perfection, I’m thrilled to finally share a classic lasagna recipe that I genuinely love. This isn’t just a recipe; it’s a revelation.
Why This Lasagna Recipe is Simply THE BEST
What makes this lasagna stand head and shoulders above the rest? It boils down to a symphony of robust flavors and carefully selected ingredients that come together in perfect harmony. Every layer is crafted to contribute to an unforgettable eating experience, making each bite deeply satisfying and utterly delicious.
The Heart of the Dish: A Rich Meat Marinara Sauce
The foundation of this incredible lasagna is its deeply complex and savory meat marinara sauce. Unlike many recipes that rely solely on ground beef, we elevate the flavor profile significantly by using zesty Italian sausage. The inherent herbs and spices in Italian sausage infuse the sauce with an unparalleled depth, creating a richer and more aromatic base. This slow-simmered sauce features easy-to-use canned tomatoes (fire-roasted if you can find them for an extra layer of smoky sweetness), a blend of special vegetables like finely diced onions and plenty of garlic, and a splash of dry red wine, which adds a beautiful complexity and acidity. Generous amounts of dried herbs further deepen its character, making it a sauce you’ll want to eat by the spoonful.
Layers of Creamy, Melty Cheese Perfection
Of course, it wouldn’t be lasagna without an abundance of glorious cheese! This recipe calls for three distinct cheeses, each playing a crucial role in achieving that perfect texture and taste: creamy ricotta, sharp, freshly-grated Parmesan, and gooey shredded mozzarella. The ricotta mixture is combined with a fresh egg to bind it beautifully to the noodles, ensuring a cohesive and satisfying texture. Furthermore, fresh basil is incorporated directly into the cheese mixture and generously sprinkled on top, offering bursts of aromatic freshness that cut through the richness.
Effortless No-Boil Noodles for Convenience
To simplify the process without compromising on quality, we opt for easy no-boil lasagna noodles. This eliminates the messy and time-consuming step of boiling pasta beforehand, saving you precious minutes and effort. These noodles cook perfectly within the lasagna, absorbing the delicious sauce and becoming wonderfully tender. When all these flavorful components are baked together, they transform into a bubbly, melty, and incredibly hot pan of lasagna that is 100% worth every bit of preparation time.
Making Lasagna: An Enjoyable Culinary Experience
While this recipe isn’t a 30-minute weeknight meal, I want to emphasize that it is far from difficult in terms of technique. It primarily requires about an hour of dedicated prep time. Think of it as a delightful culinary project for an evening when you’re not in a rush. Put on some of your favorite music, perhaps pour yourself a glass of wine or a refreshing sparkling water, and immerse yourself in the enjoyable process of creating something truly special. I promise, the outcome – the most delicious, comforting lasagna you’ve ever tasted – will be an incredibly rewarding experience that you’ll be eager to repeat.

Essential Lasagna Ingredients for a Perfect Dish
Ready to create this culinary masterpiece? Here’s a comprehensive guide to the simple yet crucial ingredients you’ll need. Focusing on quality will truly elevate your lasagna from good to absolutely unforgettable.
- Italian Sausage: I firmly believe that high-quality Italian sausage is the secret weapon for an outstanding classic lasagna. Its rich, herbaceous, and zesty flavors are simply unmatched. Feel free to choose mild, sweet, or hot sausage based on your preference. If you prefer, a 50/50 mix of Italian sausage and ground beef also works wonderfully, though the sausage brings a unique depth.
- Aromatic Vegetables: We’ll finely chop a medium onion and plenty of fresh garlic to build a fragrant base for our sauce. Additionally, half a cup of diced roasted red peppers adds a delightful smoky and sweet undertone, enhancing the sauce’s complexity without overpowering it.
- Premium Tomatoes + Tomato Paste: The quality of your tomatoes truly makes a difference. Seek out three 15-ounce cans of good-quality whole tomatoes. Fire-roasted varieties, if available, impart an extra layer of flavor. A few tablespoons of tomato paste will further concentrate the tomato flavor and thicken the sauce.
- Dry Red Wine: A half-cup of dry red wine adds an incredible depth and a subtle tang to the meat sauce, deglazing the pan and unlocking rich flavors. If you prefer not to cook with wine, beef, chicken, or vegetable stock can be substituted with good results.
- Dried Herbs + Spices: Simple yet impactful, our blend includes crushed red pepper flakes for a hint of warmth, dried oregano for classic Italian flavor, a bay leaf for depth, and plenty of sea salt and freshly-cracked black pepper to season perfectly.
- Abundant Fresh Basil: When it comes to fresh basil in lasagna, more is definitely merrier! We’ll chop a generous amount and stir it into the cheese mixture, then recommend sprinkling extra on top as a vibrant, fragrant garnish after baking.
- The Perfect Cheese Trio: This recipe features a harmonious blend of three cheeses. You’ll need two 15-ounce containers of creamy ricotta cheese (either whole milk or part-skim will work), one cup of freshly-grated Parmesan for maximum flavor, and four cups (one pound) of shredded mozzarella, which provides that irresistible melty, stringy texture.
- Egg: A single egg is whisked into the ricotta mixture. This acts as a binder, helping the cheese layer to set beautifully and preventing it from becoming too runny.
- Lasagna Noodles: For ultimate convenience and a consistently tender result, I highly recommend no-boil lasagna noodles. If you choose classic noodles, remember to soak them in hot (not boiling) water for about 30 minutes while you prepare the other ingredients. This pre-softening ensures they cook through perfectly in the oven.

Step-by-Step Guide: How To Make Lasagna
As mentioned, crafting this homemade lasagna is a straightforward process that simply requires a bit of time and patience. Dedicate about an hour for prep, gather your ingredients, and let’s create something truly delicious. The effort is absolutely worth it for the incredible results. Here’s how you’ll bring this lasagna to life:
- Prepare the Flavorful Meat Sauce: Begin by cooking your Italian sausage and diced onion in a large sauté pan or stockpot over medium-high heat. Break up the sausage with a wooden spoon as it browns, ensuring it’s cooked through. Stir in the minced garlic, tomato paste, and crushed red pepper flakes, sautéing for another two minutes until fragrant. Deglaze the pan with dry red wine, scraping up any delicious browned bits from the bottom. Add the drained whole tomatoes (breaking them up with your spoon), roasted red peppers, oregano, bay leaf, salt, and pepper. Bring the sauce to a simmer, then reduce the heat to medium and let it gently simmer for 10-15 minutes, allowing about half of the liquid to reduce. The sauce should still be somewhat juicy to help cook the noodles but not overly watery. Remove the bay leaf before setting the sauce aside.
- Craft the Creamy Cheese Mixture: While the sauce simmers, prepare your cheese filling. In a separate mixing bowl, combine the ricotta cheese, freshly-grated Parmesan, roughly chopped fresh basil leaves, and the egg. Stir everything together until well combined and uniform.
- Preheat Oven & Prep Baking Dish: Preheat your oven to 375°F (190°C). Lightly mist a 9 x 13-inch baking dish with cooking spray to prevent sticking and ensure easy cleanup.
- Assemble Your Lasagna Layers: Now for the exciting part – building your masterpiece! Careful layering ensures every forkful is perfectly balanced.
- First Layer: Spread approximately 1.5 cups of the rich meat sauce evenly across the bottom of the prepared baking dish. Arrange a layer of lasagna noodles over the sauce, covering the surface as much as possible. Dollop about one-third of the ricotta mixture over the noodles in small spoonfuls, then gently spread it out into an even layer. Finish this layer with about 1 cup of shredded mozzarella.
- Second Layer: Follow with another even layer of about one-third of the remaining sauce, another round of lasagna noodles, half of the remaining ricotta mixture, and 1 cup of shredded mozzarella.
- Third Layer: Continue with half of the remaining sauce, a final layer of lasagna noodles, and all of the remaining ricotta mixture.
- Fourth (Top) Layer: Spread all of the remaining meat sauce evenly over the top, then generously sprinkle with the final 1 cup of shredded mozzarella.
- Bake to Golden Perfection: Loosely tent the baking dish with aluminum foil, being careful to avoid the foil touching the cheese too much (you can lightly spray the underside of the foil to prevent sticking). Transfer the covered pan to the preheated oven and bake for 45 minutes. After 45 minutes, remove the aluminum foil and continue to bake for another 15-20 minutes, or until the sauce is visibly bubbling around the edges and the top layer of cheese is beautifully melted, golden, and slightly bubbly. Carefully remove the pan from the oven and place it on a wire baking rack to cool for at least 5 minutes before slicing. This resting period helps the lasagna set, making it easier to serve.
- Serve and Savor: Once rested, sprinkle your desired optional toppings such as extra fresh basil, more Parmesan cheese, or a dash of crushed red pepper flakes. Slice into generous portions, serve warm, and dig in to enjoy the absolute best homemade lasagna!

Customizing Your Lasagna: Delicious Recipe Variations
One of the joys of making homemade lasagna is its incredible versatility. This recipe serves as a fantastic base, but the possibilities for customization are virtually limitless. Don’t hesitate to get creative and experiment with different additions or substitutions to make it perfectly suited to your taste! Here are some popular variations:
- Experiment with Different Meats: While Italian sausage is highly recommended for its unique flavor, you can certainly use other ground meats. Ground beef, turkey, or chicken would also be delicious alternatives. If using these, I suggest adding about a tablespoon of Italian seasoning to the sauce to compensate for the herbs typically found in Italian sausage.
- Craft a Delightful Vegetarian Lasagna: To make this recipe completely vegetarian, simply omit the meat entirely. In its place, you can sauté finely chopped vegetables such as mushrooms, carrots, zucchini, bell peppers, or eggplant. Just be sure to cook these vegetables thoroughly to release their excess moisture, which will prevent your vegetarian lasagna from becoming watery.
- Boost Your Veggie Intake: Even if you’re including meat, feel free to add extra vegetables to the sauce. I’m particularly fond of chopping up a handful of baby bella mushrooms and sautéing them with the onions and sausage for an earthy depth. Spinach or finely chopped bell peppers are also excellent additions.
- Introduce Spinach Lasagna: For a classic spinach lasagna, thaw a 10-ounce package of frozen chopped spinach. It’s crucial to squeeze out as much moisture as possible from the spinach to avoid a watery ricotta layer. Once thoroughly drained, simply stir the spinach into the ricotta cheese mixture before layering.
- Enhance with More Fresh Herbs: Don’t limit yourself to just basil! Feel free to incorporate any other fresh Italian herbs you have on hand. Chopped fresh rosemary, thyme, or sage would all add wonderful dimensions of flavor in addition to or alongside the basil.
- Amp Up the Cheese Factor: For an extra-cheesy topping, feel free to double the amount of mozzarella on the final layer. You can also experiment with other cheeses you love; smoked mozzarella adds a fantastic depth, or a touch of crumbled goat cheese can introduce a lovely tang.
- Spice Things Up: If you enjoy a bit of heat, easily make your lasagna spicier by doubling or even tripling the amount of crushed red pepper flakes in the meat sauce.
- Opt for Veggie Noodles: For a lighter, gluten-free, or vegetable-rich alternative, you can substitute traditional pasta noodles with thinly sliced zucchini or eggplant (sliced lengthwise). For either option, you must “drain” the veggie noodles first: sprinkle them with salt and lay them out on paper towels for about 30 minutes to draw out excess water. Then, rinse off the salt, pat them thoroughly dry, and layer them into your lasagna as you would with pasta.

Make-Ahead & Freezer Instructions for Lasagna
This ultimate lasagna recipe is fantastic for meal prepping or feeding a crowd, as it freezes beautifully both before and after baking. This makes it an ideal dish to prepare in advance for busy weeks or unexpected guests. Here’s how to manage it:
How To Freeze Lasagna (Before Baking): If you want to prepare your lasagna ahead of time and bake it later, simply assemble the lasagna in your baking dish exactly as instructed. Before baking, cover the pan tightly with a layer of plastic wrap, pressing it down so it adheres directly to the top layer of cheese. This prevents freezer burn. Then, cover the entire pan tightly with aluminum foil. Label and freeze for up to 3 months. When you’re ready to bake, transfer the frozen lasagna to the refrigerator and let it thaw for 24 hours. Once thawed, bake according to the instructions, adding an extra 10-15 minutes to the covered cook time to ensure it cooks through completely. Enjoy!
How To Freeze Lasagna (After Baking): You can also freeze an entire pan of baked lasagna, or individual leftover servings. Allow the baked lasagna to cool completely to room temperature. For a whole pan, wrap it tightly with plastic wrap directly touching the top, then cover with aluminum foil, as described above. For individual servings, transfer them to airtight food storage containers. Freeze for up to 3 months.
How To Reheat Frozen (Cooked) Lasagna: To reheat a pan of previously baked and frozen lasagna, remove all plastic wrap and cover the entire pan with aluminum foil. Bake at 350°F (175°C) until the lasagna is heated through to an internal temperature of around 165°F (74°C). This can take 45-60 minutes or more, depending on the size of the pan. Remove the foil for the last 5-10 minutes of baking to allow the top layer of cheese to crisp up and turn golden, then serve immediately.

Perfect Pairings: What To Serve With Lasagna
This hearty, flavorful lasagna is a meal in itself, but it pairs beautifully with a few simple sides to create a complete and well-balanced Italian feast. Here are some of my favorite recommendations:
- My Everyday Salad (or for an extra Italian touch, try the Everyday Italian Salad): A crisp, fresh green salad provides a wonderful contrast to the richness of the lasagna, offering a light and refreshing element.
- Everything Roasted Asparagus or Roasted Brussels Sprouts: Roasted vegetables add a touch of freshness and a slight bitterness that complements the savory lasagna beautifully. Their simplicity allows the main dish to shine.
- Garlic Bread: No Italian meal is truly complete without warm, crusty garlic bread for soaking up any lingering sauce!

The absolute best lasagna recipe — easy to make, layered up with the most delicious flavors, and so incredibly cozy and comforting. See notes above for potential ingredient variations.
Ingredients
Scale
Meat Sauce:
- 1 ½ pounds ground Italian sausage (or you can do half sausage + half ground beef)
- 1 medium white or yellow onion, peeled and diced
- 6 large garlic cloves, peeled and minced
- 3 tablespoons tomato paste
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup dry red wine (or beef stock)
- 3 (15-ounce) cans whole tomatoes*, drained
- 1/2 cup diced roasted red peppers
- 2 teaspoons dried oregano
- 1 bay leaf
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly-cracked black pepper
Cheese Mixture:
- 2 (15-ounce) containers ricotta cheese (part-skim or whole milk)
- 1 cup freshly-grated Parmesan cheese
- 1 cup tightly-packed fresh basil leaves, roughly chopped
- 1 egg
Remaining Layers:
- 4 cups (1 pound) shredded mozzarella
- 15 no-boil lasagna noodles (or however many needed to make three layers in your pan*)
- optional toppings: extra basil, Parmesan cheese and/or crushed red pepper flakes
Instructions
- Make the sauce: In a large sauté pan or stockpot, cook the sausage and onion over medium-high heat until the sausage is completely browned, crumbling it with a wooden spoon as it cooks. Add the garlic, tomato paste and crushed red pepper flakes and sauté for 2 more minutes, stirring occasionally. Stir in the wine, using a wooden spoon to scrape up any of the browned bits that have stuck to the bottom of the pan. Add the tomatoes, roasted red peppers, oregano, bay leaf, salt and pepper, and stir to combine. Use the wooden spoon to break up the tomatoes into small pieces as the sauce continues to cook. Once the sauce reaches a simmer, reduce heat to medium to maintain the simmer. Then let the sauce continue to simmer and reduce down for about 10-15 minutes, or until about half of the juices have evaporated. (You still want the sauce to be fairly juicy, just not overly so.) Discard bay leaf. Remove pan from heat and set aside until ready to use.
- Make the cheese mixture: Meanwhile, in a separate mixing bowl, stir together the ricotta, Parmesan, basil and egg until combined.
- Prep the oven and baking dish: Heat the oven to 375°F and mist a 9 x 13-inch baking dish with cooking spray.
- Assemble: Next, it’s assembly time!
- First layer: Spread 1.5 cups of the sauce mixture evenly along the bottom of the pan. Then add on a layer of lasagna noodles (so that the surface of the pan is covered, more or less), followed by 1/3 of the ricotta mixture (which I recommend adding in small spoonfuls, which you can then spread out into an even layer), followed by 1 cup of the shredded mozzarella.
- Second layer: Evenly layer 1/3 of the remaining sauce, 1 more round of lasagna noodles, 1/2 of the remaining ricotta mixture, and 1 cup shredded mozzarella.
- Third layer: Evenly layer 1/2 of the remaining sauce, 1 more round of lasagna noodles, all of the remaining ricotta mixture.
- Fourth layer: Evenly layer all of the remaining sauce, 1 cup shredded mozzarella.
- Bake: Loosely tent aluminum foil to cover the pan (try to avoid touching the cheese). Transfer pan to the oven and bake for 45 minutes. Remove the aluminum foil and bake for 15-20 more minutes, until the sauce is bubbly around the edges and the top of the cheese starts to bubble and turn golden. Transfer the pan to a wire baking rack and cool for 5 minutes.
- Serve: Sprinkle with your desired toppings, slice, serve warm and enjoy!

Notes
Italian Sausage: Feel free to use whatever kind of sausage you prefer — hot, mild or sweet — to tailor the spice level to your liking.
Tomatoes: For an enhanced depth of flavor, I highly recommend using fire-roasted tomatoes if you can find them in your grocery store.
Lasagna Noodles: The exact number of noodles (15) is an estimate. You will need enough to create three complete layers that effectively cover the surface of your particular 9×13 inch pan, as brands can vary in size. If you are using classic lasagna noodles (not the no-boil variety), it is essential to submerge and soak them in hot (not boiling) water for approximately 30 minutes before you begin assembling the lasagna. This step ensures they become tender during baking.
