Brussels Sprouts Tacos with Creamy Avocado Sauce: A Flavorful Road Trip Inspired Dish
There’s a special joy that comes with hitting the open road, isn’t there? Lately, I’ve found myself completely enamored with road trips. The freedom of setting your own pace, the ever-changing scenery outside your window, and the spontaneous detours that lead to unexpected discoveries – it’s an experience unmatched by any other form of travel. And when you share that adventure with someone special, like my partner Barclay, it truly elevates the journey. These trips aren’t just about the destination; they’re about the shared moments, the playlists, the podcasts, and, of course, the delicious snacks that fuel your explorations.
This year, I’ve been a strong advocate among my friends for embracing shorter, more frequent weekend getaways instead of solely focusing on grand, once-a-year vacations. The idea is to make the most of current opportunities, like affordable gas prices, and weave more mini-adventures into our lives. So, when Barclay and I discovered we both had a clear schedule for an upcoming weekend, we didn’t hesitate. Our long-standing wish was to visit my sister in Chicago, especially with the onset of warmer weather, and it felt like the perfect opportunity. Thursday after work, we packed our bags, loaded the car, and set off. The entire experience proved to be incredibly smooth and surprisingly easy!
One of the most striking aspects of our spontaneous trip was the sheer affordability. We calculated our total gas expenditure for the entire weekend to be a remarkable $42. This budget-friendly travel allowed us to enjoy a full three days exploring the vibrant city of Chicago, all while only needing to take a single day off from work. It was a stark contrast to the often-stressful and expensive ordeal of air travel. Instead of navigating airport security, tuning out chatty flight attendants, or enduring the cries of restless babies, we curated our perfect road trip soundtrack. We cranked up our favorite podcasts (I highly recommend this particular episode – truly thought-provoking!), indulged in a heartfelt Prince tribute, and simply enjoyed each other’s company, chatting our way across the beautiful Midwest. It was pure bliss.
Of course, no road trip is truly complete without an array of delectable snacks to keep spirits high and appetites satisfied. Since we were hitting the road directly after work at 5 PM and didn’t want to make an immediate dinner stop, I decided to whip up a batch of something hearty and portable to bring along. This is where my latest culinary obsession came into play: these incredible Brussels Sprouts Tacos, generously drizzled with a heavenly Creamy Avocado Sauce. I was absolutely smitten with the sautéed sprouts, but Barclay, ever the connoisseur of sauces, emphatically declared the “magical” avocado sauce to be the undisputed highlight. And honestly, he might just be right!

These vegetarian tacos had been a long-standing dream of mine. For a while, I’d been envisioning the perfect blend of textures and flavors. If you follow my culinary adventures on Snapchat (@gimmesomeoven), you might recall my experimental phase this past month. I tried several variations, first a shredded sprouts version – which, while delicious, ended up resembling seaweed a bit too much for my liking. Then came a simple creamy sauce, which was good, but it wasn’t until I perfected the creamy avocado sauce that I truly felt I had a winner. And as Barclay pointed out, that sauce indeed steals the show!
The beauty of this creamy avocado sauce lies in its remarkable simplicity and fresh, vibrant flavor. It’s a game-changer for these tacos and can easily elevate any Mexican-inspired dish. To create this “magical” concoction, you simply blend a ripe avocado with sour cream, fresh cilantro, minced garlic, a hint of cumin, a pinch of salt, and a generous squeeze of fresh lime juice. Process these ingredients until you achieve a wonderfully smooth consistency. Then, gradually thin it out with a little water until it reaches your desired drizzling perfection. Imagine the lushness of guacamole transformed into a versatile, pourable sauce – that’s precisely the experience you’re in for!

With your incredible sauce prepared, the next step is to create the robust and flavorful filling for your Brussels sprouts tacos. This involves a quick sauté of fresh Brussels sprouts, adding a delightful crisp-tender texture and nutty flavor. These are joined by thinly sliced poblano peppers, which offer a mild, smoky heat, along with diced onion and aromatic garlic, building a rich flavor base. Once these vegetables are perfectly tender and slightly caramelized, a can of rinsed and drained black beans is folded in, providing a hearty, protein-packed component that makes these tacos incredibly satisfying. The combination of earthy sprouts, smoky peppers, and creamy black beans creates a dynamic and irresistible filling.

Once your filling and sauce are ready, it’s time for the best part: assembly! Warm your favorite corn or flour tortillas until they are soft and pliable – a quick zap in the microwave between damp paper towels usually does the trick. Then, generously load each tortilla with a few spoonfuls of the vibrant Brussels sprouts and black bean mixture. Next, comes the star of the show: a heaping drizzle of that exquisite creamy avocado sauce, blanketing the filling with its refreshing and tangy goodness. A sprinkle of crumbled queso fresco or cotija cheese adds a final touch of salty, creamy richness, tying all the flavors together beautifully.

And then, just like that, this glorious green goodness is all yours to savor. The textural contrast between the tender-crisp Brussels sprouts, the creamy beans, and the silky sauce, all wrapped in a warm tortilla, is simply incredible. Every bite is an explosion of fresh, savory, and tangy flavors – truly a “wowza” moment!

What makes these Brussels Sprouts Tacos even more appealing? They are naturally vegetarian, yet incredibly hearty and filling, making them a fantastic plant-based meal option. For those with dietary restrictions, you’ll be happy to know they are also naturally gluten-free (just ensure your tortillas are corn-based). Best of all, they can be prepped and cooked in under half an hour, making them a perfect solution for busy weeknights, last-minute gatherings, or even as a flavorful component for your next road trip snack arsenal. Whether it’s Taco Tuesday, an early Cinco de Mayo celebration, or just any ordinary day you’re craving a stellar, satisfying taco, this recipe delivers. Prepare to be delighted!
Buen provecho!
