This particular recipe for simple yet spectacular Cannoli Cups emerged from just such a precious gathering, a heartfelt send-off for a truly remarkable friend.

Life is full of exhilarating leaps of faith, and my dear friend, Sara Swenson, recently took one of the most inspiring I’ve witnessed. Just this past Friday, my beloved book club sisters and I gathered to bid Sara a bittersweet farewell as she embarks on an incredible journey across the ocean. Her destination? To unite with the love of her life. Sara’s path has been nothing short of extraordinary. She transitioned from a career as an English teacher to pursue her passion as a singer-songwriter – and if you haven’t heard her, you absolutely must discover her beautiful music, which even graced the screens of “Private Practice”! This courageous career shift not only brought her artistic fulfillment but also serendipitously led her to an amazing man with a charming British accent who, in true fairytale fashion, pretty much instantly fell for her. Their long-distance romance, blossoming from halfway around the world, has been a beautiful testament to destiny and determination. Witnessing their love story unfold has been a profound inspiration, reminding us all of the power of following one’s heart. My heart is full of gratitude and immense excitement for her new chapter.

For such a special evening, brimming with fine wine, delightful sweets, and our signature deep conversations, I knew my contribution had to be something memorable. My mind immediately turned to a traditional Italian dessert, but with an innovative twist, inspired by yet another incredibly talented friend – Lisa. Our paths crossed years ago when she auditioned for a choir I was directing, and her own life story has been a continuous source of wonder and admiration. After navigating a particularly challenging period, Lisa found love again, marrying another wonderful man. It was then, almost on a whim, that she decided to launch her very own culinary website, dedicating it entirely to the rich and diverse world of Italian dessert recipes. (Yes, the name of her amazing site is exactly that: Italian Dessert Recipes!) I can personally attest, having tried countless recipes from her collection, that every single one is nothing short of fantastico! They are a true celebration of authentic Italian flavors.

So, when the idea of creating adorable little cannoli cups for Sara’s party sparked in my mind, I instantly knew where to find the perfect filling recipe. Without hesitation, I turned to Lisa’s tried-and-true cannoli filling, and as expected, it was absolutely exquisite! Get ready to fall in love with these delightful Cannoli Cups! This recipe transforms your favorite classic Italian dessert into a wonderfully accessible and charming bite-sized treat. Instead of traditional fried shells, we use crisp wonton wrappers baked into adorable little cups, filled with a rich, creamy, and subtly sweet ricotta filling. They’re perfect for parties, gatherings, or simply when you crave a taste of Italy without the fuss. Simple to make, incredibly delicious, and utterly irresistible – these homemade cannoli cups will become your new go-to dessert!

  • 1 package (16 oz.) wonton wrappers
  • 1 container (15 oz.) ricotta cheese
  • 1/4 cup cornstarch
  • 1 1/3 cups whole milk
  • 1/2 cup powdered sugar
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla extract
  • 1/4 tsp cinnamon (optional)
  • 2 cups mini semisweet chocolate chips
  • powdered sugar (for dusting)

Instructions

  1. In a medium-sized bowl, carefully and slowly whisk 1 cup of the whole milk into the cornstarch until the mixture is completely smooth and free of any lumps. Set this cornstarch slurry aside and let it rest for approximately 20 minutes to allow the cornstarch to fully dissolve and hydrate.
  2. Transfer the cornstarch mixture into a heavy-bottomed saucepan. Now, add the remaining 1/3 cup of milk and the 1/2 cup of powdered sugar to the saucepan. Heat the mixture over medium-low heat, stirring constantly with a whisk or rubber spatula. Continue stirring until the mixture becomes very thick, smooth, and coats the back of a spoon (this should take about 7-10 minutes). Once thickened, remove the saucepan from the heat. Stir in the almond extract and vanilla extract. To prevent a “skin” from forming on the surface as it cools, place a piece of plastic wrap directly onto the surface of the filling. Allow the mixture to cool completely until it reaches room temperature.
  3. While the filling cools, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare a mini baking cup pan (mini muffin tin). Gently press 30-35 wonton wrappers into the individual cups of the pan, forming them into small “cups.” If you don’t have enough pans for all the wrappers at once, you can bake them in multiple batches. Ensure that the corners of the wonton wrappers don’t fold in on themselves after sitting in the pan for a minute; gently reshape if necessary. Bake the wonton cups for 10-15 minutes, or until they are beautifully golden brown and crisp. Carefully remove the baked cups from the pan and transfer them to a wire rack to cool completely.
  4. Once the milk mixture has reached room temperature, whisk in the ricotta cheese and the optional cinnamon until the filling is perfectly smooth and creamy. For an extra velvety texture, you can also use an electric mixer on low speed. Spoon the delectable cannoli filling into a pastry bag fitted with a wide tip, or simply use a spoon to scoop the mixture generously into each baked wonton cup. Garnish each cup generously with mini semisweet chocolate chips, then lightly dust with additional powdered sugar for a final elegant touch. These cannoli cups can be refrigerated until ready to serve, or enjoyed immediately.

Notes

Speedy Cooling Tip: If you find yourself in a rush to assemble these delicious cannoli cups (as I occasionally do!), my friend Lisa has a fantastic trick. Instead of letting the milk mixture cool in the saucepan, transfer it to a shallow pan or a wide bowl immediately after cooking. Spreading the mixture thinly allows it to cool much faster. I’ve tried this by placing it on a cool countertop, and the filling was ready in approximately 10 minutes! It’s a real time-saver!

Make Ahead & Storage: The baked wonton cups can be made 1-2 days in advance and stored in an airtight container at room temperature. The cannoli filling can also be prepared a day ahead and refrigerated in an airtight container. Assemble the cannoli cups just before serving to ensure the wonton shells remain wonderfully crisp.

Variations: Feel free to customize your cannoli cups! A drizzle of melted dark chocolate, a sprinkle of chopped pistachios, or even a touch of orange zest in the filling can add exciting new dimensions to this classic treat.
