Beyond potatoes, they diversify into other crops such as wheat, soybeans, and corn, showcasing a remarkable breadth of agricultural expertise.

It’s clear that Black Gold Farms has carved out an extraordinary legacy in the farming industry over several generations. I was incredibly eager to visit and learn firsthand the captivating story behind their remarkable success and deep-rooted commitment to quality.

But perhaps most excitingly, I was absolutely thrilled to see exactly where my beloved spuds originate!

In the heart of summer, a lively group of bloggers and I embarked on our journey, flying into Memphis, TN. Over an eventful 24-hour period, we traversed three different states, eventually arriving back in my home state of Missouri (Go MO!) at the Black Gold Farm in Arbyrd. There, we were warmly introduced to John and Leah Halverson, the brother and sister duo who are the great-grandchildren of Hali Halverson, the visionary who founded Black Gold Farms approximately 85 years ago.

Since its humble beginnings, the farm has undeniably flourished into a massive enterprise. However, from the moment John, Leah, and their dedicated team extended their genuine welcome, it was profoundly evident that Black Gold Farms remains, at its core, a deeply family-owned and operated business. Both John and Leah were born and raised on this very farm, and they now proudly uphold the family tradition, passionately striving to ensure the farm continues to thrive and set benchmarks for agricultural excellence.

The sheer statistics regarding the annual potato production at Black Gold Farms are truly mind-blowing. Half a billion pounds? That translates into an astonishing quantity of those utterly irresistible potato chips we all love!

While I deeply admired the immense hard work and dedication their family and employees have poured into growing this business over the decades, what truly resonated with me was their forward-thinking investment in the future of their farm and land. Long before it became a popular buzzword, it was clear that the Halversons and Black Gold Farms have been steadfastly dedicated to **sustainability**.

This commitment manifests in various crucial ways across environmental, social, and economic spheres, making it a paramount priority for their company. This dedication is particularly poignant when you consider their hope of one day passing the farm down to their own children. For instance, their strategic decision to expand operations to 11 states was driven by the desire to be closer to their markets, significantly reducing transportation costs and environmental pollution. Furthermore, they are deeply committed to responsible land stewardship, diligently employing the latest technology and research to ensure their farming practices are truly sustainable for generations to come. Beyond environmental concerns, I was especially moved by the profound ways the farms give back to the communities where they operate. From serving on local boards and championing the arts to simply providing exceptional care for their employees, countless stories highlighted their deep investment in their people. It was truly inspiring to witness such holistic dedication.

The Journey of a Potato: From Field to Harvest

So, how exactly do these renowned potatoes grow and transform into the delicious spuds we enjoy? To truly earn some “farm cred,” John, our gracious host, insisted we venture out into the dusty potato fields to experience it firsthand!

Our first stop was a farm where white potatoes, commonly known as chipping potatoes, were on the cusp of harvest. It was fascinating to see fellow bloggers like Heidi and Sandi enthusiastically harvesting a few for a lively show-and-tell session!

These “chippers” earned their name because their thin skins easily flick off, making them perfect for processing into potato chips. The farmers ingeniously determine their readiness with a simple “flick test,” a technique we all eagerly tried our hands at.

Of course, we got a little carried away, playfully spearing a few potatoes…

Beyond the “chippers,” Black Gold Farms also cultivates table-stock potatoes – the very ones you find on grocery store shelves, destined for our dinner tables. These potatoes require a slightly longer maturation period. After flourishing in the field for approximately 100 days, the green foliage above ground is carefully “killed off,” allowing the potatoes beneath the soil to mature for an additional 14-20 days. This crucial period allows their initially soft skins to toughen, preparing them for the rigors of harvest. Once this stage is complete, they are perfectly ready for collection.

In days gone by, potato harvesting was a laborious, hand-picked affair. Today, however, sophisticated harvesters perform much of the heavy lifting. Yet, these impressive machines still demand the skillful touch of highly talented and experienced drivers.

From Field to Shelf: The Processing Facility

After a delicious lunch at a local diner – where I indulged in my all-time favorite college fried treat, corn fritters! – we headed to the processing facility. This is where all the freshly harvested potatoes arrive from the fields. Here, they undergo a meticulous process of weighing, cleaning, testing, and sorting. They are then directed either to a potato chip plant or carefully prepared for the shelves of your local grocery store.

To ensure peak quality, batches of the “chippers” are rigorously tested daily in their on-site kitchen, guaranteeing they are absolutely perfect for crafting those iconic Lay’s potato chips. And yes, I conducted my own taste test, and they passed with flying colors!

Following quality control, various types of potatoes are meticulously bagged and packaged for distribution to stores. We observed everything from convenient small bags…

Now, let’s circle back to the “table” aspect of our farm-to-table journey, where those vibrant red potatoes were transformed into these glorious Loaded Smashed Red Potatoes. Some days just unequivocally call for loaded potatoes, don’t they? For a delightful twist on a beloved classic, I decided to feature the natural sweetness and tender texture of red potatoes. But instead of simply baking or mashing them, I opted for an exciting middle ground – *smashed*! And rather than combining them into one large serving, I chose to create charming individual portions, which proved to be an absolute hit!

I “loaded” mine with a medley of my all-time favorite toppings: perfectly melted shredded sharp cheddar cheese, savory crumbled cooked bacon, thinly sliced vibrant green onions, a touch of creamy butter, and a sprinkle of flavorful seasoned salt. For an unexpected and delicious twist, I also added some diced avocado on top, which elevated them to an “avocadolicious” new level. Feel empowered to include or omit any of these toppings, or get creative and add your own unique flair!

The bottom line is, these smashed red potatoes were an undeniable and *smashing* success at dinner. I served them as an effortless yet impressive side dish, but they would also shine as a fantastic appetizer or a fun, interactive food for any game day celebration. Loaded Smashed Red Potatoes

  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
  • Total Time: 50 minutes
  • Yield: About a dozen potatoes

Description

These loaded smashed red potatoes are perfect for game day, a side dish, or even a fun appetizer!


Ingredients

  • 2 lbs. red potatoes
  • 2-3 Tbsp. melted butter or olive oil
  • seasoned salt, to taste
  • freshly-ground black pepper, to taste
  • toppings: shredded cheese (I used sharp cheddar), crumbled cooked bacon, thinly-sliced green onions, diced avocado, sour cream, extra butter, etc.

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Fill a large stockpot 1/2-2/3 full of water (leaving room for the potatoes), and bring to a boil over high heat. Add in potatoes, cover, and reduce heat to medium. Cook until the potatoes are fork-tender, about 20 minutes.
  3. Cover a baking sheet with aluminum foil, then spray generously with cooking spray. Place the cooked potatoes about 2-3 inches apart on the baking sheet. Then use a potato masher or a meat mallet to gently press each potato down until it is approximately 1-inch thick. Brush the tops of each crushed potato generously with melted butter or olive oil. Then sprinkle liberally with seasoned salt and black pepper to taste.
  4. Bake for 20-25 minutes, or until the edges of the potatoes begin to turn slightly golden brown and become crispy. Remove from oven and immediately sprinkle with your desired toppings. Serve warm and enjoy!
