It arrived as a delightful gift box brimming with entertaining essentials, accompanied by a save-the-date for an incredible in-home, hands-on Spanish tapas cooking class led by a professional chef! While the prospect of a culinary expert in my own kitchen initially brought a touch of nerves – my cooking skills are self-taught, and my kitchen is decidedly cozy – the sheer excitement of the experience quickly overshadowed any apprehension.

Knowing that this would be a truly memorable event, I immediately extended invitations to a few close girlfriends who share my love for cooking and good food. Little did we know, we were about to embark on an evening of culinary magic with the incredibly talented Chef Jim! Together, we crafted an impressive spread of seven (yes, seven!) exquisite Spanish tapas dishes, each one a testament to the vibrant flavors of Spain. The experience was not only educational but profoundly enjoyable, creating lasting memories. Today, I’m excited to share a glimpse into that fantastic evening, along with the recipe for what quickly became my absolute favorite dish of the night: these irresistible Oven-Fried Spanish Croquettes.

A Culinary Journey: Learning from Chef Jim

Our delightful evening commenced with the arrival of Chef Jim Sturm from KC Chef. From the moment he stepped through the door, we were all instantly charmed. Beyond his obvious expertise as a chef and instructor, Chef Jim possessed an infectious enthusiasm and an incredibly easy-going demeanor that made everyone feel at ease. It was abundantly clear that he genuinely loves what he does, and that passion resonated throughout the entire class. His personal story is equally inspiring: a decade ago, he bravely transitioned from a corporate career to pursue his culinary dreams, enrolling at the prestigious Le Cordon Bleu. Since then, he has dedicated himself to creating exceptional food and empowering others to discover their own culinary capabilities – a truly commendable journey!

Before the class, Chef Jim had reassured me via email that he would arrive with everything necessary for our cooking session. And he was not exaggerating! He brought an astonishing array of equipment, meticulously organized, covering every possible need for teaching and preparing eight intricate courses. From professional-grade knives and a massive cooler for fresh ingredients to a complete set of pots and pans, and even a beautiful molcajete (which I happily got to keep!), his level of preparation was truly remarkable. This foresight ensured our evening began seamlessly and remained wonderfully organized from start to finish.

As a devoted sangria enthusiast, I was particularly thrilled to learn that our first course of the evening would be a delectable, fruit-infused sangria. We provided the base wine, and Chef Jim expertly guided us through transforming it with layers of fresh fruit and a hint of apricot nectar. The result was a heavenly concoction that perfectly set the scene, initiating our Spanish culinary adventure on a wonderfully vibrant note. It truly was the ideal start to an unforgettable evening of flavors and fun!

Following our refreshing sangria, it was time to get down to the serious business of cooking. The “class” portion of the evening kicked off with an essential lesson: Knife Skills 101! Chef Jim thoughtfully provided each of us with our own cutting board and a sharp knife, along with a generous bag of onions. We then diligently set to work, learning the proper techniques for holding a knife, peeling, and cutting onions with precision. A valuable lesson we quickly absorbed was that the sharper the knife, the less likely you are to shed tears while cutting onions. Dull blades tend to crush cells rather than slice them cleanly, releasing more irritants into the air. This practical tip, along with many others, proved invaluable throughout the evening.

Despite our newfound knife skills, a few onion-induced tears were still shed – a testament to the potent nature of onions, perhaps! However, the crucial victory of the evening was that no fingers were sliced. It was a successful first step into more advanced cooking techniques, and we were all proud of our progress.

With our improved knife proficiency, Chef Jim then directed us to various tasks: chopping, dicing, julienning, and meticulously preparing a vibrant array of produce and fresh herbs. Each ingredient was destined for one of our many delicious tapas courses, contributing to the rich tapestry of flavors we were building.

Its sweet, mellow flavor and creamy texture are so incredibly addictive, I could honestly eat it like candy. Sharing this simple yet profound culinary revelation was a joy.

Even for an experienced home cook like myself, there were new techniques to discover. I learned a fascinating method for grating tomatoes, a step I initially approached with a bit of skepticism. To my surprise, it yielded an incredibly vibrant and wonderfully textured sauce that truly elevated one of our dishes.

Preparing seven distinct recipes in a single evening was an ambitious undertaking, but we embraced the challenge with enthusiasm. We were diligent students, closely following Chef Jim’s expert guidance, all while enjoying plenty of laughter, refreshing sips of sangria, and delightful nibbles of a magnificent block of Manchego cheese. The atmosphere was one of camaraderie and pure enjoyment.

One aspect I particularly adored about the evening was the authentic “Spanish-style” dining experience: courses were served fresh, one by one, as soon as they were perfectly ready. And let me tell you, as each mouthwatering dish emerged from the oven, our eagerness to dive in was palpable. Every single tapa was an absolute triumph!

The Star of the Show: Our Unforgettable Spanish Croquettes

Oh, my goodness. While I could easily compose an entire essay on the merits of each exquisite course, I absolutely had to dedicate special attention to these incredible croquettes. They were the very last item on our menu, and trust me when I say that by the time they emerged, golden and bubbling, from the oven, we were all more than satisfied!

However, after watching them transform from a rich, creamy filling into perfectly breaded, inviting spheres, and then emerge from their final cooking stage, none of us could resist a “little” taste. That little taste quickly led to another, and then another – soon, the plate was being passed around again and again. Their allure was simply undeniable.

This Spanish croquettes recipe was nothing short of divine! The Panko breadcrumbs provided an exquisite, satisfying crispness on the exterior. As a dedicated food blogger, the moment a dish captivates me, my natural instinct is to recreate it. So, this past week, I embarked on a mission to perfect these croquettes for my own kitchen. While Chef Jim’s traditional frying method was excellent, I personally tend to avoid deep-frying at home. Thus, I set out to develop an oven-fried version, utilizing the same wonderfully crispy Panko breading.

My intern, Rachel, and I eagerly whipped up a batch. We quickly realized we had made a small substitution error, accidentally using Mexican chorizo instead of Spanish chorizo. While not quite the same, the result was still undeniably delicious. We followed Chef Jim’s instructions meticulously for the filling and breading process. The key deviation came in the final step: instead of pan-frying, we preheated our oven to a robust 450 degrees Fahrenheit and baked them until golden and bubbly.

And thankfully… it worked beautifully! I was absolutely ecstatic. I had harbored some doubts about whether the oven-fried adaptation could truly rival the original, but the outcome was a resounding success. These oven-fried croquettes achieved a perfectly crispy exterior while maintaining that irresistible, melty interior. This makes them not only a healthier option but also incredibly convenient for entertaining. You can prepare them a day in advance, store them in the fridge, and simply pop them into the oven when your guests arrive. I’m already certain these will be making a frequent appearance at future gatherings!

Description

These Oven-Fried Spanish Croquettes are crispy on the outside, wonderfully melty on the inside, and bursting with authentic Spanish flavor! A perfect appetizer or party snack.


Ingredients

  • 1/4 cup (half stick) butter
  • 2 Tbsp. olive oil
  • 1/2 cup all-purpose flour, plus more for breading
  • 1 1/2 cups milk
  • 1/2 tsp. smoked Spanish paprika
  • 1/2 cup Manchego or Gouda cheese, freshly grated
  • 1/2 cup Spanish-style chorizo, finely chopped
  • 1 cup Panko breadcrumbs
  • 2 large eggs, whisked
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Béchamel Base: In a large skillet over medium-low heat, melt the butter with the olive oil. Add the 1/2 cup flour and cook for 1 minute, whisking constantly, until a smooth paste (roux) forms. Continue to cook for another minute, stirring, until the flour loses its starchy aroma. Increase the heat to medium-high. Gradually pour in the milk, whisking continuously for about 1 minute, until the mixture is completely smooth and thickened.
  2. Add Flavorings: Stir in the grated cheese, finely chopped Spanish chorizo, and smoked paprika. Continue to stir until the cheese is fully melted and incorporated. Season with salt and pepper to taste, adjusting as needed based on the saltiness of your chorizo.
  3. Chill the Filling: Transfer the croquette mixture to a shallow baking dish or bowl that has been lightly greased with cooking spray or a touch of oil. Place a layer of plastic wrap directly onto the surface of the filling, pressing it down to prevent a skin from forming. Cover completely and refrigerate until the mixture is thoroughly cooled and firm, typically 1 to 2 hours. This step is crucial for easy handling.
  4. Form the Croquettes: When ready to cook, preheat your oven to 450°F (230°C). Remove the chilled filling mixture from the refrigerator. Using your hands or a small cookie scoop, gently form the filling into small balls, approximately 1.5 inches in diameter. You can make them smaller (about 1-inch) if preferred for bite-sized tapas.
  5. Set Up Breading Station: Prepare a three-station breading assembly line. Place flour in the first shallow bowl. In the second bowl, whisk the 2 eggs until well combined. In the third bowl, place the Panko breadcrumbs.
  6. Bread the Croquettes: Take one filling ball and thoroughly coat it in flour, shaking off any excess. Next, dip it into the whisked egg mixture, ensuring it’s fully covered. Finally, roll it in the Panko breadcrumbs, pressing gently to ensure an even and complete coating. Place the breaded ball on a baking sheet lined with parchment paper. Repeat this process with the remaining croquette balls. Once all are breaded, lightly mist them all with cooking spray or a fine spray of olive oil for extra crispness.
  7. Final Chill & Bake: Transfer the baking sheet of breaded croquettes to the refrigerator for a final 10 minutes to cool. This helps the cheese firm up again, preventing it from melting too quickly in the oven and ensuring a beautiful, gooey center.
  8. Bake and Serve: Place the chilled baking sheet in the preheated oven. Bake for 12-16 minutes, or until the Panko breading is golden brown and visibly crispy, and the filling inside is melted and bubbly. Remove from the oven and serve immediately while hot for the best flavor and texture.
