However, for those who appreciate a deeper, fresher, and more customizable flavor, I cannot recommend making your own homemade taco seasoning enough. Just yesterday, I shared my go-to recipe for homemade taco seasoning on the blog, and it truly makes all the difference.

Why go homemade? Beyond the immense satisfaction of creating something from scratch, homemade taco seasoning offers a multitude of benefits. It’s completely preservative-free, ensuring you know exactly what’s going into your food. For those with dietary concerns, it’s naturally gluten-free and can be tailored to be lower in sodium or adjusted for specific spice preferences. The process is surprisingly easy, typically involving a mix of chili powder, cumin, paprika, garlic powder, onion powder, oregano, and a pinch of cayenne. Making popcorn on the stovetop is a simple yet satisfying culinary art. It allows for incredible control over the texture and flavor, resulting in a batch far superior to microwave bags. Here’s how to achieve perfectly popped kernels every time:

  1. **Prepare Your Pot:** Start by melting the coconut oil in the bottom of a medium-sized saucepan with a tight-fitting lid. You want enough oil to just coat the bottom of the pan – typically around one tablespoon for a half-cup of kernels. Heat the oil over medium-high heat.
  2. **The Test Kernel Trick:** To ensure your oil is at the perfect temperature, add two or three popcorn kernels to the pan and cover. Listen carefully. Once these “test kernels” pop, it signals that the oil is hot enough for the rest. This prevents both burning the oil and having unpopped kernels due to insufficient heat.
  3. **Add the Rest:** Remove the test kernels, then add the remaining popcorn kernels in a single layer. Give the pan a gentle shake to ensure all kernels are evenly coated with oil and spread across the bottom of the pan. This promotes uniform popping.

A quick note from experience: trying to photograph popcorn while it’s still actively popping on the stove is an adventure! As you can see in the image, a few kernels might decide to make an aerial escape. In my own attempt to capture that perfect moment, a second later, I had popcorn scattered everywhere! It’s all part of the fun, but perhaps best avoided if you prefer a clean kitchen.

  2. **Sprinkle and Toss:** Immediately sprinkle your chosen taco seasoning and salt generously over the warm popcorn. Then, using a large spoon, spatula, or simply by gently shaking the bowl, toss everything together to combine. The warmth of the popcorn helps the seasoning stick better, creating an even and delicious coating on each kernel.
  3. **Taste and Adjust:** This is perhaps the most important step for personalization. Take a small handful of popcorn and taste it. Do you crave more spice? A bit more salt? Feel free to adjust the seasonings to your preference. I personally love my popcorn intensely flavorful, so I often add a bit more seasoning than initially suggested. However, if you prefer a more subtle flavor, less can definitely be more. Don’t be shy about experimenting until you find your perfect balance.

Ingredients

  • 1 Tbsp. coconut oil
  • 1/2 cup popcorn kernels
  • 2 Tbsp. taco seasoning (homemade or store-bought)
  • 1 tsp. salt (more/less to taste)
  • (*optional: melted butter for drizzling or nutritional yeast)

Instructions

  1. Heat oil in a medium saucepan over high heat until melted. Add popcorn kernels, and give the pan a shake so that they level out. Cover with a lid and wait until kernels have popped. (**See notes below to prevent burning).
  2. Once the popcorn is popped, pour it out into a serving bowl. Immediately sprinkle with taco seasoning and salt, and toss to combine. Season to taste with additional seasoning or salt if desired.

Notes

*The “skinny” version of this recipe does not call for extra butter, but if you’d like to toss the popcorn with some melted butter, go for it. A healthier (and vegan) alternative is also to toss the popcorn with nutritional yeast — my favorite.

**A good rule of thumb is to wait until there are at least 3 seconds between pops, so as not to burn the popcorn. I also like to give the pan a shake every 15 seconds or so, in order to let the kernels fall to the bottom and the popped popcorn rise to the top, which also helps prevent burning.
