Elevate Your Weekend Brunch: Irresistible French Toast Cups
Saturdays are not just any day; they are a sacred institution, particularly for those who cherish the ritual of brunch. There’s a unique magic in waking up to the gentle weekend sunshine, free from the rush of weekdays. The quiet joy of padding into the kitchen in your coziest pajamas and slippers, ready to craft something truly special. The aroma of freshly brewed pour-over coffee filling the air, perhaps accompanied by a curated playlist of relaxing tunes, sets the perfect backdrop for a leisurely morning. It’s a time to pull out your favorite pots and pans, to slow down, and to lovingly prepare a feast of comforting breakfast foods. This, to me, is the epitome of weekend bliss.
And what could make this idyllic scene even better? Sharing it. Imagine inviting your dearest friends to gather around a beautifully set table, laughter echoing through the room as you share stories, sips of coffee, and plates piled high with homemade delights. It’s about more than just food; it’s about connection, community, and creating cherished memories.
Now, let’s add one more element to truly perfect this picture: serving adorable, perfectly portioned French Toast Cups, generously drizzled with an epic, homemade whiskey cream cheese glaze. That, my friends, is the definition of my kind of Saturday. It’s a dish that combines elegance with comfort, making it an absolute showstopper for any brunch gathering.

A Memorable Farewell Brunch in Kansas City
Just a few weeks ago, on the final Saturday morning of January, my home was filled with exactly this kind of warmth and joy. It was the day before I embarked on a month-long adventure in Austin, and my heart was heavy with the bittersweet anticipation of saying temporary goodbyes to my beloved Kansas City friends. To make our last gathering before my departure truly special, I decided to host a farewell brunch. I invited my Wednesday night small group from Jacob’s Well, along with my friend Kathryne, who would later join me in Texas, and my incredibly talented neighbor, Cate, who graciously offered to capture the moments with her camera.
While my friends often prefer to explore the vibrant local restaurant and coffee shop scene on Saturday mornings, I wanted this occasion to be different. I rose early, determined to cook up some of my all-time favorite brunch foods, creating a cozy and relaxing morning *in*. It was a chance to savor each other’s company in the comfort of my own space, making it feel even more intimate and heartfelt.

Adding to the charm of the day, West Elm partnered with me for this post, celebrating the joy of Saturdays (and their stunning new Kate Spade Saturday collection). Their beautiful dinnerware inspired me to wake up even earlier to meticulously set the table, ensuring a truly picturesque start to our weekend. The delicate details and vibrant colors truly brought the brunch vision to life.

As friends slowly began to arrive, the house quickly filled with cheerful chatter. We passed around refreshing mimosas and plenty of freshly brewed coffee, easing into the morning. The atmosphere was light, warm, and utterly inviting – exactly what I had hoped for.

To kick off our feast, I prepared a variety of my favorite mini breakfast parfaits, layered with crunchy granola, creamy Greek yogurt, plump blueberries, a drizzle of honey, and a sprinkle of chia seeds. These vibrant, healthy starters were complemented by savory roasted hashbrowns and an assortment of fresh, colorful veggies, ensuring there was something for everyone to enjoy.

And as expected, the moment the main dishes began to emerge from the kitchen, everyone naturally gravitated towards the table, eager to dig into the spread. It’s always a beautiful sight to see friends gather, drawn together by the promise of good food and even better company.

In a last-minute flurry of creativity, I realized I had forgotten a topping for the French Toast Cups. On a whim, I whisked together a simple cream cheese glaze, then made an impromptu decision to elevate it with a splash of whiskey. This spontaneous addition proved to be a stroke of genius, transforming a simple glaze into something truly extraordinary.

Needless to say, the whiskey cream cheese glaze was an instant hit! Its rich, tangy, and subtly boozy flavor complemented the sweet French Toast Cups perfectly, adding an unforgettable touch to our brunch spread. It just goes to show that sometimes the best culinary discoveries are born from a little improvisation.
As delicious as those little French Toast Cups turned out, nothing surpassed the warmth and comfort of having so many beloved people gathered around for one final meal in Kansas City. These friends are more than just acquaintances; they are my chosen family, my “people.” For the thousandth time, I felt incredibly fortunate and grateful to have them in my life, sharing in moments both big and small. Now, after a whirlwind month in Austin, I’m back, and my gratitude has only deepened, for the 1001st time, to be reunited with them. The shared meal was a beautiful affirmation of our bond.

And on a side note, my furry companion, Henry, insisted that I mention his affection for them too. Especially when they’re generous enough to share their French Toast Cups with him. He’s quite the brunch connoisseur himself!

Crafting Perfect French Toast Cups: A Step-by-Step Guide
Speaking of those irresistible French Toast Cups, let’s dive into how you can create these delightful treats in your own kitchen! They essentially capture all the comforting goodness of traditional French toast, but with a brilliant twist: the bread is chopped into small, bite-sized pieces and baked in muffin cups. This clever preparation method transforms a potentially messy dish into neat, single-serving portions, making them absolutely perfect for serving to a crowd without the fuss of flipping individual slices at the stove. Imagine the ease of preparing a large batch simultaneously, allowing you more time to mingle and enjoy your guests.

My friends enthusiastically supported this innovative approach, as it meant everyone could easily grab a cup (or two!) and enjoy. It’s a win-win: minimal effort for the host, maximum enjoyment for the guests!

The magic of these French Toast Cups truly lies in their texture. Fresh from the oven, they boast beautifully crispy, golden-brown tops, offering a satisfying crunch with every bite. Beneath that delightful exterior, you’ll discover soft, delightfully chewy centers, perfectly infused with the sweet, spiced egg mixture. It’s a textural symphony that makes them utterly addictive. This contrast is often harder to achieve with traditional French toast, but the muffin tin method ensures consistent perfection.
Once baked, these golden delights are ready for their crowning glory. Guests have the delectable option of topping them with either the rich, tangy whiskey cream cheese glaze, a generous drizzle of warm maple syrup, or for the truly indulgent, both! The interplay of the sweet maple with the creamy, slightly boozy glaze is a taste sensation not to be missed.

Seriously, I highly recommend going for both. The combination creates a depth of flavor that is simply unparalleled, transforming a simple breakfast item into a gourmet experience. It’s the kind of dish that inspires joy and perhaps even a spontaneous mini dance party!

Just a fair warning: these French Toast Cups are so incredibly good, they might just inspire you to break out into an impromptu dance party or even a high-jumping contest with your favorite two-year-old friend. They truly embody the spirit of joyful indulgence that makes weekend mornings so special.

Total Time: 50 minutes
Yield: 12 servings 1x
Description
These French Toast Cups are quick and easy to make, they come in single servings, and they are topped with a heavenly whiskey cream cheese glaze.
Ingredients
Scale
French Toast Cups Ingredients:
- 6 large eggs, whisked
- 1 1/2 cups milk
- 1/4 cup light brown sugar, packed
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/2 teaspoon salt
- 15 cups of 1/2-inch bread cubes*
- for serving: whiskey cream cheese glaze (see below) and maple syrup
Whiskey Cream Cheese Glaze Ingredients
- 4 ounces cream cheese, softened
- 3/4 cup powdered sugar
- 2 tablespoons whiskey (or you can substitute milk if you’d rather nix the whiskey)
- 1/2 teaspoon vanilla extract
- 2–3 tablespoons milk
Instructions
To Make The French Toast Cups:
- Preheat oven to 350 degrees F (175°C).
- In a large mixing bowl, whisk together eggs, milk, brown sugar, vanilla, cinnamon, and salt until combined and smooth. Add in the bread cubes, and toss until they are evenly coated with the egg mixture. Cover the bowl with plastic wrap and refrigerate for 10 minutes. Remove the bowl and toss the bread cubes once more with the egg mixture, and refrigerate for 10-30 more minutes. This soaking time is crucial for soft, flavorful centers.
- Grease a 12-cup muffin pan with cooking spray, or line each cup with paper liners for easier removal. When the French toast mixture is thoroughly soaked and ready, portion it evenly into the 12 muffin cups, gently pressing down on each one a bit as needed so that it fits snugly into the cup.
- Bake for 25-30 minutes, or until the tops are crispy and golden brown, and the centers are set. Remove from the oven and let cool in the pan for 5 minutes. Then, carefully remove each cup and serve warm, drizzled generously with maple syrup and/or the whiskey cream cheese glaze.
To Make The Whiskey Cream Cheese Glaze:
- In a medium bowl, whisk softened cream cheese, powdered sugar, whiskey, and vanilla extract together until the mixture is completely smooth and free of lumps. Add in milk, one tablespoon at a time, continuing to whisk until the glaze reaches your desired pourable consistency. If you prefer a non-alcoholic option, simply substitute the whiskey with additional milk.
Notes
*I highly recommend using a rich, sturdy bread for this recipe, such as brioche, challah, or sourdough. These varieties hold their shape well and absorb the egg mixture beautifully, resulting in the best texture. I simply cut mine into uniform 1/2-inch cubes with a bread knife.
Make Ahead Tip: You can prepare the bread cubes and the egg mixture the night before. Combine them and let them soak overnight in the refrigerator. In the morning, simply portion into muffin tins and bake. This makes hosting brunch even more relaxed!

Why French Toast Cups Are Your New Brunch Essential
Beyond the personal narrative, let’s talk about why these French Toast Cups deserve a permanent spot in your brunch repertoire. First and foremost, convenience is king when it comes to entertaining. Traditional French toast requires standing over a hot stove, flipping slices one by one, often leaving the cook feeling more like a short-order chef than a relaxed host. With French Toast Cups, you simply portion the soaked bread mixture into muffin tins and let your oven do all the work. This hands-off approach frees you up to enjoy your guests, sip on a mimosa, or simply savor the quiet moments of your Saturday morning.
Secondly, the single-serving format is incredibly appealing. Each cup is a perfectly contained, bite-sized piece of heaven. This makes them ideal for buffets, potlucks, or simply for guests who prefer a lighter portion. No need for knives and forks; these are delightfully easy to eat with just a fork, or even by hand if you’re feeling informal. They also present beautifully on a platter, adding an elegant touch to your brunch spread.
Finally, the unique texture achieved by baking these cups is a game-changer. The edges become wonderfully crisp and caramelized, while the interior remains irresistibly soft and custard-like. This delightful contrast of textures elevates the humble French toast to a gourmet level, ensuring every bite is a delightful experience. And when paired with that unique whiskey cream cheese glaze, you have a dish that is truly unforgettable.
Tips for a Seamless & Delicious Brunch
Hosting brunch doesn’t have to be stressful. With a little planning, you can create a memorable spread that leaves you feeling relaxed and accomplished. Here are a few tips to ensure your French Toast Cups brunch is a resounding success:
- Prep Ahead: As mentioned in the recipe notes, the French Toast Cup mixture can be prepared the night before. This is a game-changer! You can also soften your cream cheese and measure out dry ingredients for the glaze, or even make the glaze entirely and store it in the fridge.
- Variety is Key: While the French Toast Cups are the star, offer a variety of other items to complement them. Think fresh fruit platters, yogurt parfaits, crispy bacon or sausage, and a green salad to balance the richness.
- Drink Station: Set up a self-serve drink station with coffee, tea, juices, and perhaps a mimosa bar with different fruit purees. This takes the pressure off you to constantly refill drinks.
- Ambiance Matters: Don’t underestimate the power of a good playlist, fresh flowers, and comfortable seating. These small touches contribute significantly to the overall experience and set a welcoming mood.
- Delegate: If friends offer to help, take them up on it! Assign simple tasks like refilling water glasses, setting out plates, or helping with cleanup. Shared effort makes the experience more enjoyable for everyone.
