If you choose unsalted almonds, a tiny pinch of extra salt in the crust mixture will elevate the flavors.

  • 1/2 cup semisweet or dark chocolate chips
  • 1/2 cup toasted flaked or shredded coconut

For the Rich Chocolate Ganache:

  • 6 ounces good quality semisweet or dark chocolate, finely chopped or chocolate chips
  • 1/4 cup Blue Diamond Almond Breeze Original Almond Milk or 2% dairy milk (almond milk enhances flavor)
  • 2 tablespoons unsalted butter or coconut oil

Instructions

To Prepare the Gluten-Free Almond Cheesecake:

  1. Preheat your oven to 325°F (160°C). Lightly grease a 9-inch springform pan. To prevent any water leakage from the water bath, carefully wrap the outside of the pan in two layers of heavy-duty aluminum foil, ensuring there are absolutely no gaps where water could seep through.
  2. In a large mixing bowl, combine the almond meal and melted butter. Stir thoroughly until the mixture is evenly moistened and resembles coarse crumbs. Press this almond mixture firmly and evenly into the bottom of the prepared springform pan. For the water bath, place the foil-wrapped springform pan into a larger roasting dish (or any pan larger than the springform itself). Bring a tea kettle or a pot of water to a rolling boil. Set the pan assembly aside for now. (*Optional: If you prefer not to use a direct water bath, you can skip placing the springform pan in the larger dish and instead place a separate pan of water on the oven rack below your cheesecake for a humid baking environment.)
  3. Using an electric mixer, beat the softened cream cheese on medium speed for about 3 minutes until it becomes exceptionally smooth and creamy, with no lumps. Gradually add the granulated sugar and continue beating for an additional minute until it’s fully incorporated and the mixture is well blended. Next, add the Greek yogurt, unsweetened cocoa powder, vanilla extract, and almond extract. Beat for another minute, pausing midway to scrape down the sides and bottom of the bowl with a spatula to ensure everything is thoroughly combined. Finally, add the eggs, one at a time, beating on low speed *just* until each egg is incorporated before adding the next. Remember to scrape the bottom of the pan once or twice during this process. Be very careful not to overbeat the mixture once the eggs are in, as this can introduce too much air and lead to cracking. Pour the silky smooth cheesecake batter over the pre-baked almond crust in the springform pan.
  4. Carefully transfer the double-pan setup (springform inside the larger roasting dish) to the preheated oven, placing it on a shelf in the bottom third of the oven. Now, with extreme caution, use your tea kettle or a large measuring cup to pour the boiling water into the larger pan, creating a water bath around the springform. The water should come up about 1 inch (2.5 cm) around the sides of the springform pan.
  5. Gently close the oven door and bake for approximately 1 hour and 15 minutes, or until the center of the cheesecake is almost set but still exhibits a slight jiggle when gently nudged. This slight jiggle indicates perfect doneness. Turn off the oven, crack the oven door slightly (leaving it ajar by a few inches), and allow the cheesecake to cool slowly in the oven for about 1 hour. This gradual cooling prevents drastic temperature changes that can cause cracks. After this period, remove the cheesecake from the oven. Carefully run a thin knife around the edges of the cake to loosen it from the pan. Let it cool completely to room temperature on a wire rack. Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or ideally, overnight, to allow it to fully set and firm up. Once thoroughly chilled, remove the springform rim and prepare to top your cheesecake.

In a small saucepan, combine all ganache ingredients: finely chopped semisweet or dark chocolate (or chocolate chips), Blue Diamond Almond Breeze Original Almond Milk (or dairy milk), and butter or coconut oil. Notes for Success:

**To make your own almond meal for the gluten-free crust, simply pulse whole Blue Diamond Almonds in a food processor or a clean coffee grinder until they reach a fine, powder-like consistency. Be cautious not to over-process them, as this can release their oils and turn them into almond butter. I highly recommend using Blue Diamond Roasted Salted Almonds for the crust, as their subtle hint of salt wonderfully enhances the overall flavor of the cheesecake. If you opt for unsalted almonds, consider adding an extra pinch of fine sea salt to the crust mixture to achieve a similar depth of flavor.

Room Temperature Ingredients: Ensure your cream cheese and eggs are at room temperature. This is crucial for a smooth batter that blends easily and prevents lumps, contributing to that perfect creamy texture.

Preventing Cracks: The water bath is your best friend for a crack-free cheesecake! It creates a humid environment that ensures even, gentle baking. Also, remember not to overbeat the batter, especially after adding the eggs, and allow the cheesecake to cool slowly in the oven before fully chilling.
