- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 large carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 10 cups ham or chicken broth*
- 1 2-pound head cabbage, cored and roughly diced
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large saucepan or small stockpot over medium heat, warm the olive oil. Add the finely diced onion and cook, stirring occasionally, until it starts to become translucent, typically about 5 minutes. Incorporate the diced carrots, celery, and minced garlic and continue to cook, stirring occasionally, until the carrots and celery are crisp-tender, approximately 3 minutes.
- Stir in the diced ham, the ham or chicken broth, the roughly diced cabbage, and the bay leaves. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to a gentle simmer, cover the pot, and cook until the cabbage is thoroughly tender, which usually takes 15 to 20 minutes. Season with salt and pepper to taste. Remember to remove the bay leaves before serving.
- *To make homemade ham broth: Combine 2 smoked ham hocks, 1 carrot, 1 celery stalk, 1 onion (quartered), 2 bay leaves, 1 teaspoon whole peppercorns, and 4 quarts of water in a large stockpot. Bring this mixture to a boil over low heat, then reduce it to a very gentle simmer. Cover the pot and cook until the meat effortlessly falls off the ham hocks, which typically takes 3 to 4 hours. Strain the broth through a fine-mesh sieve, discarding the solids, and then add salt and pepper to taste. This process yields approximately 3 quarts of rich, flavorful ham broth, perfect for this soup and many other recipes.
