  1. Prepare for Cutting: Place a ripe mango on a stable cutting board, positioning it on its side. Identify the flatter sides of the mango. The goal is to make two long, vertical cuts as close to the central seed as possible without cutting into it. Carefully make your first cut, creating one “mango cheek.” Rotate the mango 180 degrees and repeat the cut to create the second “mango cheek.” Set these two oval pieces aside.
  2. Addressing the Pit: Take the remaining central piece of the mango, which still contains the large, flat pit. Lay this piece flat on your cutting board. Make two additional long slices on either side of the pit, carefully removing any remaining flesh. Discard the central pit. You should now have several pieces of mango flesh ready for peeling and dicing or slicing.
  3. Peel and Initial Slice (for smaller pieces): For the two narrower, longer slices of mango flesh you just cut from around the pit, carefully use your knife to remove the skin. Discard the peel. Now, you can cut these peeled pieces into your desired slices or dices. Set these aside with the cheeks.
  4. The “Hedgehog” Method for Cheeks: Take one of the large oval “mango cheek” pieces and place it peel-side down on your cutting board. With a sharp knife, carefully make even, parallel cuts in the mango flesh, without cutting through the skin. Aim for cuts that are your desired width for slices or dices. Then, make perpendicular cuts across the first set (if dicing), creating a grid pattern. Gently press on the peel-side of the mango until the flesh inverts, creating a “hedgehog” shape where the mango cubes or slices protrude. Carefully use your knife to slice off the flesh from the peel. Discard the peel and repeat this process with the last remaining oval piece.
  5. Serve or Store: Your perfectly cut mango is now ready! Serve and enjoy it immediately to savor its freshest flavor. If you have leftovers, transfer the cut mango to an airtight container and refrigerate for up to 3 days. For longer preservation, freeze the mango for up to 3 months, ideal for smoothies and frozen desserts.
