This Slow Cooker Beef Ragu recipe is incredibly easy to prep and slow-simmered in the most delicious, rich tomato sauce. It’s the ultimate comfort food, perfect served over your favorite pasta, creamy polenta, or anything that sounds good to you.


Ingredients

  • 1 teaspoon olive oil
  • 6 garlic cloves, smashed slightly
  • 1 1/2 pounds flank steak, cut against the grain into 4 pieces (or substitute with chuck roast for a richer flavor)
  • Kosher salt and freshly-ground black pepper, to taste
  • 1 (28-ounce) can crushed tomatoes (high-quality San Marzano tomatoes are recommended for best flavor)
  • 1/4 cup beef stock (or dry red wine for added depth)
  • 1 medium carrot, finely chopped (adds a touch of sweetness and body to the sauce)
  • 2 bay leaves
  • 2 sprigs of fresh thyme (remove before serving)
  • 16 ounces pappardelle pasta (or any preferred pasta like tagliatelle, rigatoni, or even spaghetti)
  • 1/2 cup freshly-grated Parmesan cheese, for serving
  • 1/2 cup part-skim ricotta cheese, for serving (optional, adds a creamy, mild contrast)
  • Chopped fresh parsley, for garnish

Instructions

  1. In a small skillet, heat the olive oil over medium-high heat. Add the smashed garlic cloves and cook, stirring occasionally, until they are golden and lightly browned, typically about 2 minutes. This step infuses the oil with a wonderful aroma and flavor.
  2. Season the pieces of flank steak generously with 1 teaspoon of kosher salt and freshly-ground black pepper on all sides. Transfer the seasoned beef to a 5- to 6-quart slow cooker.
  3. Pour the crushed tomatoes and beef stock (or red wine) over the beef in the slow cooker. Add the browned garlic, finely chopped carrots, bay leaves, and fresh thyme sprigs. Stir gently to combine the ingredients around the beef.
  4. Cover the slow cooker with its lid and cook on high for 6 hours, or on low for 8-10 hours. The longer cooking time on low heat will result in exceptionally tender beef.
  5. Once cooked, carefully remove and discard the bay leaves and thyme sprigs. Using two forks, shred the beef directly in the pot. The meat should be incredibly tender and easily pull apart. Stir the shredded beef back into the rich tomato sauce.
  6. While the ragu is cooking, or when it’s almost done, bring a large pot of heavily salted water to a rolling boil. Add the pappardelle pasta (or your chosen pasta) and cook according to package directions until it is perfectly al dente. Drain the pasta thoroughly.
  7. Return the drained pasta to its pot. Add the prepared beef ragu from the slow cooker to the pasta. Increase the heat to high and cook, stirring constantly, for about 1 minute, allowing the pasta to absorb some of the delicious sauce and for everything to be well combined and heated through.
  8. Divide the beef ragu and pasta among 8 individual pasta bowls. Top each serving with about 1 tablespoon of freshly-grated Parmesan cheese and, if desired, 1 tablespoon of creamy part-skim ricotta cheese.
