The Irresistible Allure of Homemade Salsa: A Summer Tradition

For anyone who knows me, it’s no secret: if given the choice between almost anything else and a generous bowl of chips and salsa, my decision is always crystal clear – salsa, every single time! And in the heart of summer, when local markets overflow with ripe, juicy tomatoes, my excitement reaches a fever pitch. There’s an almost magnetic pull to those vibrant red orbs, and without fail, a few pounds inevitably find their way into my shopping bag. The mission? To craft a fresh, zesty batch of homemade salsa that will brighten up the week. There’s truly nothing quite like the fresh, dynamic flavors of a truly good salsa.

This week, I decided to venture beyond the traditional and infuse a simple chipotle salsa with a touch of cocoa. For those raising an eyebrow, hear me out! My love affair with the chili and chocolate combination is well-documented (you might remember previous experiments in various dishes), but I had never dared to introduce it into a salsa. Now, after tasting the results, I’m left wondering why it took me so long! This creation is nothing short of delicious, offering a sophisticated twist on a classic. The cocoa addition is remarkably subtle, acting not as a dominant chocolate flavor, but rather as a profound flavor enhancer. When paired with savory ingredients like tomatoes, smoky chipotles, and onions, cocoa powder imparts a rich, deep umami note, adding a layer of complexity that elevates the entire profile. It’s not sweet; it’s wonderfully nuanced and adds a mysterious depth that will have everyone guessing your secret ingredient. You’ll be amazed at how this unexpected ingredient brings out the best in the peppers and tomatoes. Plus, the beauty of homemade salsa is its adaptability: feel free to adjust the amount of chipotle peppers and jalapeno to match your preferred level of spiciness, making it perfectly tailored to your palate.

Dive Deeper into Cocoa Chipotle Salsa: Ingredients & Preparation

Let’s talk about the magic behind this Cocoa Chipotle Salsa. Each ingredient plays a crucial role in creating a harmonious blend of flavors that is both familiar and wonderfully new.

The Stars of the Show: Tomatoes and Chipotles

  • Tomatoes: The foundation of any great salsa. I highly recommend using ripe Roma tomatoes for their firm flesh and lower water content, which yields a thicker, richer salsa. However, any sweet, juicy tomato variety picked fresh from the garden or farmer’s market will work beautifully. Their natural sweetness balances the heat and smoke.
  • Chipotle Peppers in Adobo Sauce: These are the game-changers. Dried, smoked jalapeños rehydrated in a tangy, slightly spicy sauce, chipotles bring an unparalleled smoky depth and a pleasing warmth. Using the peppers directly from the can, along with a bit of the adobo sauce, ensures that signature flavor. If you’re sensitive to heat, start with one or two peppers and gradually add more to achieve your desired intensity. Remember, you can always add more heat, but it’s hard to take it away!

The Unsung Heroes: Onion, Garlic & Jalapeño

  • White Onion: Provides a crisp, pungent base that mellows beautifully when pulsed with other ingredients, adding essential freshness and a slight sweetness.
  • Jalapeño: For that fresh, vibrant kick. Stemming and seeding the jalapeño reduces its heat significantly, allowing its bright, peppery notes to shine through without overwhelming the salsa. For an extra spicy salsa, you can leave some of the seeds and membranes intact.
  • Garlic: The aromatic backbone. Four cloves deliver a robust, savory punch that complements the earthiness of the cocoa and the smokiness of the chipotles.

The Secret Weapon: Unsweetened Cocoa Powder

This is where the magic happens! Unsweetened cocoa powder is not just for desserts. In savory dishes, especially those with chili, it acts as a phenomenal flavor enhancer. Think of traditional Mexican moles, which famously combine chocolate with various chilies. The cocoa here doesn’t make the salsa taste like chocolate; instead, it deepens the savory notes, adds a subtle earthiness, and rounds out the flavors, creating an incredibly rich and complex profile. It brings a sophisticated, almost mysterious depth that truly elevates this salsa beyond the ordinary.

Balancing Act: Salt

A simple teaspoon of salt is crucial for bringing all these vibrant flavors together. It brightens the tomatoes, highlights the chipotles, and ensures every ingredient sings in harmony.

The beauty of this recipe lies in its simplicity. With a good food processor, you can transform these fresh, quality ingredients into a spectacular salsa in mere minutes. It’s the perfect blend of smoky, spicy, and subtly rich, making it an unforgettable addition to your summer menu.

Cocoa Chipotle Salsa Recipe

Cocoa Chipotle Salsa

Delicious Cocoa Chipotle Salsa, ready to be served.

Add a subtle cocoa kick to some delicious chipotle salsa!

Prep Time:

5 minutes

Total Time:

5 minutes

Yield:

4-5 cups

Ingredients

  • 2 lb. tomatoes (I used roma)
  • 1 large white onion
  • 1 jalapeno, stemmed and seeded*
  • 1/4 cup chipotle peppers in adobo sauce (or one 3.5 oz. can)
  • 4 cloves garlic
  • 2 Tbsp. unsweetened cocoa powder
  • 1 tsp. salt

Instructions

  1. Pulse all ingredients in a food processor until blended to your desired consistency. Serve immediately or refrigerate for up to one week in an airtight container.

Notes

*If you prefer a less spicy salsa, I strongly recommend omitting the fresh jalapeno entirely and starting with just one or two chipotle peppers from the can. Taste the salsa as you go and gradually add more chipotle peppers to reach your preferred level of heat. The spice level can be quite personal, so adjust to your liking!

Serving Suggestions: This versatile salsa is fantastic with classic tortilla chips, but don’t stop there! Try it as a topping for grilled chicken, fish tacos, scrambled eggs, or even as a flavorful sauce for quesadillas. Its unique depth makes it a wonderful accompaniment to a variety of dishes.

Storage: For best flavor, consume within 5-7 days when stored in an airtight container in the refrigerator.
