Essential Ingredients for Your Thanksgiving Casserole

Before diving into the full recipe, let’s explore the key components that bring this Thanksgiving casserole to life. Each ingredient plays a vital role in creating the rich, multifaceted flavor and comforting texture that defines this dish.

Vegetables: The Heart of the Casserole

  • Sweet Potato: Adds natural sweetness and a creamy texture. While sweet potatoes are traditional, you can substitute with other potatoes like russet or Yukon gold for a different flavor profile.
  • Fresh Green Beans: Provides a fresh, crisp element and vibrant color. Frozen green beans can be used in a pinch, just ensure they are thawed and drained well.
  • Celery and Onion: These aromatic staples form the foundational flavor base, adding depth and a savory backbone to the dish.
  • Garlic: Don’t be shy with the garlic! This is a substantial casserole, and a generous amount of minced garlic will ensure every bite is packed with savory goodness.
  • Seasoning: Abundant salt and freshly cracked black pepper are crucial. Season the vegetables as they cook, and always taste the final mixture before baking to adjust as needed.

The Stuffing Base: Crusty Bread for Texture

  • Quality Crusty Bread: Sourdough is highly recommended for its robust flavor and excellent texture. The key is to use dried-out bread, which prevents the stuffing from becoming soggy. If your bread is fresh, dice it into cubes and let it air dry overnight, or quickly dry it in the oven as it preheats.

Protein: Your Choice of Turkey or Alternatives

  • Cooked Turkey: Any form works beautifully – ground, diced, or shredded. This is a fantastic way to utilize leftover turkey from a previous meal.
  • Chicken: For those who prefer chicken, feel free to substitute with cooked, diced, or shredded chicken.
  • Vegetarian Option: To make this casserole entirely vegetarian, simply omit the meat. Consider adding vegetarian sausage (such as Field Roast) or sautéed mushrooms for extra umami flavor.

Sweet and Tangy Accents: Cranberries and Herbs

  • Dried Cranberries: These provide a delightful hint of sweetness and tartness, cutting through the richness of the other ingredients. Fresh cranberries can be used for a more pronounced tart flavor. Other dried berries or raisins are also great alternatives.
  • Fresh Herbs: A generous amount of finely chopped fresh herbs is essential for that signature Thanksgiving aroma and taste. A classic combination of rosemary, sage, and thyme works wonders. If fresh herbs aren’t available, a few tablespoons of your favorite dried poultry seasoning blend can be used.

Binding and Moisture: Stock and Eggs

  • Chicken or Vegetable Stock: This provides moisture and savory depth, helping to bind the stuffing components.
  • Eggs: Eggs act as a crucial binder, ensuring the casserole holds together beautifully and achieves a desirable, custardy stuffing texture.

Finishing Touches: Nuts and Gravy

  • Toasted Nuts (Optional): Sprinkling the top of the casserole with toasted pepitas, pecans, or walnuts adds a wonderful crunch and an extra layer of nutty flavor.
  • Gravy: The indispensable grand finale! A rich gravy ties all the flavors together. Our favorite mushroom gravy recipe is highly recommended, but any gravy you love will be perfect.

How to Prepare Your All-In-One Thanksgiving Casserole

Creating this magnificent Thanksgiving casserole is simpler than you might imagine. Follow these straightforward steps to assemble a dish that’s both impressive and incredibly comforting.

  1. Prepare Your Workspace and Preheat Oven: Begin by preheating your oven to 350°F (180°C). Lightly mist a 9×13-inch baking dish with cooking spray to ensure easy serving and cleanup. Having all your ingredients prepped (mise en place) will make the cooking process smooth and enjoyable.
  2. Sauté the Aromatic Vegetables: In a large non-stick sauté pan, heat olive oil over medium-high heat. Add the diced onion and sweet potato, cooking for 5 to 7 minutes, stirring occasionally, until the sweet potato begins to soften. Next, introduce the fresh green beans, minced garlic, and diced celery. Season generously with several pinches of salt and freshly cracked black pepper. Continue to sauté for another 2 to 3 minutes, or until the garlic is fragrant and the vegetables are tender-crisp. Proper seasoning at this stage is crucial for building depth of flavor throughout the casserole.
  3. Combine All Ingredients with Care: Transfer your sautéed vegetable mixture into a large mixing bowl. Add the cubed, dried bread, cooked turkey (or your chosen alternative), dried cranberries, and finely chopped fresh herbs. In a separate smaller bowl, quickly whisk together the chicken or vegetable stock and the eggs until just combined. Pour this liquid mixture over the ingredients in the large mixing bowl. Using a spatula, gently fold and toss the mixture until all components are evenly distributed and coated. Avoid over-mixing to maintain the integrity of the bread. Then, transfer this entire mixture into your prepared 9×13-inch baking dish, spreading it out into an even layer.
  4. Bake to Golden Perfection: Place the casserole, uncovered, into the preheated oven. Bake for approximately 40 to 45 minutes, or until the casserole is thoroughly cooked through, and the top has developed a beautiful golden-brown crust. Keep a watchful eye on the casserole during the final minutes; if the top appears to be browning too quickly or risking a burn, loosely cover it with a sheet of aluminum foil until it finishes baking. This ensures a perfectly cooked interior and a wonderfully crisp exterior.
  5. Whip Up Your Favorite Gravy: While your Thanksgiving casserole is baking in the oven, take this opportune moment to prepare your gravy. Whether it’s a quick batch of our recommended mushroom gravy or your family’s treasured recipe, having it ready to go ensures a seamless transition to serving.
  6. Serve and Savor: Once the casserole is out of the oven and slightly cooled, it’s ready for its grand debut. Garnish with a final drizzle of warm gravy and a sprinkle of chopped toasted nuts (if using) for added texture and visual appeal. Serve it warm, encouraging everyone to add extra gravy to their individual servings, and delight in the comforting flavors of this all-encompassing holiday dish!

Creative Variations and Customizations for Your Casserole

The beauty of this Thanksgiving casserole lies in its adaptability. Feel free to unleash your culinary creativity and customize the recipe to perfectly suit your taste, available ingredients, or dietary preferences. Here are a few inspiring suggestions to get you started:

  • Make it Vegetarian or Vegan: Easily transform this into a meat-free marvel by simply omitting the turkey. To add substance and umami, incorporate plant-based protein like sautéed mushrooms, vegetarian sausage (brands like Field Roast offer excellent options), or even some hearty lentils. For a fully vegan version, ensure your stock is vegetable-based and use a flax egg or other egg substitute.
  • Introduce a Cheesy Delight: For an extra layer of indulgence, sprinkle some shredded cheese into the casserole mixture before baking, or melt it on top during the last 10 minutes. Parmesan, Monterey Jack, mozzarella, or a sharp cheddar would all be delightful choices, adding gooey texture and rich flavor.
  • Add More Traditional Vegetables: In keeping with the spirit of Thanksgiving, consider folding in other beloved holiday vegetables. Corn or creamed corn would be a wonderful, sweet addition. Other fantastic options include diced carrots, roasted butternut squash cubes, sautéed Brussels sprouts, or even some wild mushrooms for an earthy depth.
  • Incorporate Mashed Potatoes: If you happen to have leftover mashed potatoes, they can be cleverly integrated! Use them as a creamy base layer in your baking dish, then spoon the rest of the casserole ingredients on top. This creates a delightful two-layer dish, potentially allowing you to omit the diced sweet potatoes from the main mixture if desired.
  • Experiment with Toppings: Beyond toasted nuts, think about other crispy toppings. Crushed potato chips, fried onions, or a mixture of panko breadcrumbs tossed with melted butter can add an irresistible crunch to the casserole’s golden crust.
  • Spice It Up: A pinch of cayenne pepper, a dash of smoked paprika, or a touch of nutmeg can introduce subtle warmth and complexity to the flavor profile, elevating the casserole beyond the traditional.

Description

This incredibly easy All-In-One Thanksgiving Casserole recipe brings together all your cherished holiday favorites in one convenient dish. Refer to the notes above for potential recipe variations to customize it to your liking.

Ingredients

  • 2 tablespoons olive oil
  • 1 small white onion, peeled and diced
  • 1 large sweet potato (about 1 pound), peeled, thinly-sliced and diced
  • 2 cups chopped fresh green beans (about 4 ounces), ends trimmed off
  • 6 cloves garlic, peeled and minced
  • 3 stalks celery, diced
  • Fine sea salt and freshly-cracked black pepper, to taste
  • 1 small loaf sourdough bread, cubed and dried-out (about 6 cups)*
  • 1 pound diced cooked turkey (or see alternatives in notes)
  • 2/3 cup dried cranberries
  • 1/4 cup finely-chopped fresh herbs (such as rosemary, thyme, sage, etc.)
  • 2 cups chicken or vegetable stock
  • 2 eggs
  • 1 batch mushroom gravy
  • Optional: chopped toasted nuts, for sprinkling (such as pepitas, pecans, walnuts, etc.)

Instructions

  1. Prep the oven and pan. Heat the oven to 350°F (180°C). Mist a 9 x 13-inch baking dish with cooking spray.
  2. Sauté the veggies. Heat oil over medium-high heat in a large non-stick sauté pan. Add the onion and sweet potato and sauté for 5 to 7 minutes, stirring occasionally, until the sweet potato is mostly softened. Add the green beans, garlic, celery, and season the mixture with a few generous pinches of salt and pepper. Sauté for 2 to 3 more minutes, stirring occasionally, until the garlic is fragrant.
  3. Combine everything. Transfer the cooked veggies to a large mixing bowl. Add in the bread, cooked turkey, dried cranberries, and fresh herbs. In a separate bowl, briefly whisk together the stock and eggs, then pour the mixture into the large mixing bowl. Very gently, use a spatula to toss the mixture until it is evenly combined. Transfer it to the 9 x 13-inch baking dish and spread the casserole out in an even layer.
  4. Bake. Bake the casserole uncovered for 40 to 45 minutes, or until it is cooked through and the top is nice and golden. (If the top turns too brown or looks like it is about to burn, just gently lay a sheet of aluminum foil on top of the casserole until it has finished baking.)
  5. Make the gravy. While the casserole is in the oven, make the mushroom gravy according to recipe instructions.
  6. Serve. Once the casserole is ready to go, remove the dish from the oven and garnish with a drizzle of gravy and a sprinkle of chopped nuts, if desired. Serve warm, drizzling each individual serving with extra gravy, and enjoy!

Notes

Turkey options/alternatives: You can either dice or shred some pre-cooked turkey. (Leftover baked turkey breast works perfectly, perhaps using a method similar to this recipe.) Alternatively, you could cook up a pound of ground turkey or some turkey sausage. You can also use diced or shredded chicken instead, or omit the meat entirely to make this casserole vegetarian.

Dried-out bread: Stuffing is always best when made with leftover, dried-out bread to prevent sogginess. We recommend dicing the bread into small cubes and leaving them out on the counter to dry out overnight before assembling the casserole. If you’re pressed for time, you can spread the cubed bread in a single layer on a baking sheet and let it bake and dry out a bit in the oven as it preheats.
