How To Cook Steak In The Oven | A simple recipe and step-by-step tutorial for oven baked steak.

One of the unexpected challenges of our apartment here in Barcelona? We’re not allowed to have a grill. While it didn’t seem like a major drawback initially, the moment something becomes unavailable, it often becomes the very thing you crave most—especially during the warmer months! I found myself longing for all my favorite grilled skewers, juicy burgers, and sweet grilled peaches.

Instead of letting go of these cravings, we decided to get creative this summer and elevate our indoor roasting and oven-baking game. It seems only fitting for someone whose blog is named “Gimme Some Oven,” right? And squarely in the category of “things I’ve always grilled but now master in the oven” is one of my absolute favorites: steak.

I consume very little meat these days, usually reserving it for special occasions. But when I do indulge, my go-to protein will always be a beautifully cooked, juicy, and tender steak. Growing up in the Midwest, I developed a deep appreciation for a classic meat and potatoes meal. This appreciation only grows when the steak is organic, grass-fed, perfectly seasoned, and—since it’s already a treat—topped with a generous pat of melting butter. Pure culinary bliss.

After a lifetime of grilling steaks, I admit I was highly skeptical about cooking steak properly in the oven. Could it truly deliver that perfect sear and a tender interior? As it turns out, the oven method works incredibly well! It achieves a beautifully seared, crispy crust on the outside while allowing you complete control over your desired degree of doneness on the inside. This technique is surprisingly quick, taking only about 10 minutes, and is easily customizable with your preferred seasonings or marinades. Plus, during colder months, it’s a wonderfully comfortable way to prepare steak from the warmth of your kitchen, avoiding the need to bundle up and brave the outdoors. It’s a win-win-win in my culinary book.

So, let’s dive into everything you need to know about how to cook steak in the oven for a consistently delicious meal!

Mastering Oven-Baked Steak: Your Go-To Guide

How To Cook Steak In The Oven Using A Cast-Iron Skillet

Essential Ingredients for the Best Oven Steak

To prepare this amazing oven-broiled steak recipe, you’ll need a few key ingredients:

  • Steak: Choosing the right cut is paramount for a fantastic steak. I recommend looking for:
    • High-Quality Beef: For both ethical reasons and superior flavor, I prioritize organic, grass-fed, and sustainably-raised beef whenever possible. This makes a noticeable difference in taste and tenderness.
    • Thick-Cut Perfection: For optimal results with this oven method, aim for steaks that are at least 1 to 1.5 inches thick. Thicker cuts are more forgiving and allow for that perfect sear without overcooking the interior. If your steak is thinner, just keep a closer eye on it to prevent it from becoming dry.
    • Your Preferred Cut: The beauty of this method is its versatility. Popular choices that work wonderfully include filet mignon, rib-eye, T-bone, flank steak, sirloin, or strip steak. Each offers a unique texture and flavor profile, so choose what you love most.
  • High-Heat Oil: You’ll need a cooking oil that can withstand high temperatures without smoking excessively. Avocado oil is my personal favorite for its neutral flavor and high smoke point, but grapeseed or canola oil also work well.
  • Flavorful Seasonings: While you can always get creative, I usually opt for a simple yet effective seasoning blend of fine sea salt (or seasoned salt), freshly cracked black pepper, and garlic powder. This trio enhances the steak’s natural flavor without overpowering it. To elevate it further, consider adding a pat of butter and a sprinkle of fresh thyme after cooking. However, feel free to experiment with any other dry rubs or steak marinades you adore.

Essential Tools for Oven-Baked Steak Success

Having the right equipment makes all the difference in achieving a perfectly cooked oven steak. Here are the tools I highly recommend (affiliate links included):

  • An Oven-Proof Skillet: This is arguably the most crucial piece of equipment. I cannot stress enough the importance of a cast-iron skillet. Cast iron excels at retaining and distributing heat evenly, which is key for creating that coveted crispy crust on your steak. A cast-iron Dutch oven can also work if you don’t have a skillet. If cast iron isn’t an option, ensure you use any other heavy-bottomed, oven-proof skillet capable of sustaining high heat.
  • Sturdy Tongs: You’ll be handling a very hot pan and steak, so reliable tongs are essential for safely flipping and transferring the meat. I recommend quality 12-inch tongs for ease of use and safety.
  • An Instant-Read Meat Thermometer: This is an absolute must-have for cooking steak in the oven, especially if you’re particular about doneness. A cooking thermometer provides 100% accuracy, ensuring your steak reaches your exact desired internal temperature (rare, medium-rare, medium, medium-well, or well-done). It’s an invaluable tool not just for steak, but for cooking many other proteins too. Here are a couple of excellent options:
    • Dual-Probe Wireless Meat Thermometer: I personally own and love this type of thermometer because it can be used *inside* a hot oven. This is incredibly helpful for continuously monitoring the temperature of steak, chicken, pork, or salmon without needing to open the oven door repeatedly.
    • Instant-Read Cooking Thermometer: This classic style of thermometer has been my go-to for years. It provides a quick and accurate reading when inserted into the meat. The main difference is that it cannot be left inside the oven during cooking, so you’ll need to remove the pan briefly to check the temperature.

The Ultimate Step-by-Step Guide: How to Cook Steak in the Oven

Achieving a perfectly cooked steak in the oven hinges on a few simple yet crucial steps: starting with room-temperature steak, searing it aggressively in a screaming hot skillet, finishing it under the broiler to reach your desired doneness, and finally, allowing it to rest properly to lock in all those delicious juices. As mentioned, I cannot overstate the value of using a cooking thermometer to precisely measure the internal temperature of your steak. This is the surest way to guarantee your steak is cooked exactly how you like it.

Let’s get into the specifics of preparing an exquisite oven-baked steak:

  1. Bring Steak to Room Temperature: This initial step is critical for even cooking. Remove your steak from the refrigerator and let it rest on the counter for 30-45 minutes. Allowing it to reach room temperature before cooking ensures that the entire steak cooks uniformly, preventing a cold center. Towards the end of this resting time, go ahead and preheat your oven’s broiler setting.
  2. Prepare and Season the Steak: First, blot both sides of the steak thoroughly with paper towels. This removes excess moisture, which is essential for achieving a good, crispy sear. Next, brush both sides of the steak lightly with your high-heat oil. The oil helps the seasonings adhere and promotes a beautiful crust. Finally, sprinkle generously with your chosen dry seasonings. My go-to blend is a mixture of garlic powder, kosher salt, and freshly cracked black pepper.
  3. Pre-heat Your Skillet: While the steak is resting and seasoning, place your oven-proof skillet (ideally cast iron) on the stove over high heat. Allow it to heat for about 6-8 minutes until it is screaming hot—you should see a slight shimmer from the oil (if using) or notice it’s almost smoking. A super-hot pan is key for an immediate, effective sear.
  4. Execute the Initial Sear: Carefully place the seasoned steak into the super-hot skillet. Be mindful of potential oil splatters. Immediately press down gently on the top of the steak with a spatula. This ensures the entire bottom surface of the steak makes full contact with the pan, maximizing the searing effect and preventing the steak from curving up. Sear for exactly 30 seconds. Then, using tongs, quickly flip the steak over to the other side.
  5. Broil to Your Desired Doneness: As soon as you flip the steak, carefully transfer the entire hot skillet directly into the preheated oven, under the broiler. The second side of the steak will continue to sear as it begins to cook through. Broil for 3 minutes. Then, using your tongs, flip the steak once more and continue to broil for another 2-3 minutes. During this final broiling stage, monitor the internal temperature with your meat thermometer. Remove the steak from the oven when it reaches approximately 5°F (about 3°C) *below* your desired final doneness level. Remember, the steak will continue to cook slightly as it rests (this is called carryover cooking). Doneness temperatures, measured in the thickest part of the steak, are as follows:
    • Rare: 125°F (52°C) – Remove from oven at 120°F (49°C).
    • Medium-Rare: 135°F (57°C) – Remove from oven at 130°F (54°C).
    • Medium: 145°F (63°C) – Remove from oven at 140°F (60°C).
    • Medium-Well: 150°F (66°C) – Remove from oven at 145°F (63°C).
    • Well Done: 160°F (71°C) – Remove from oven at 155°F (68°C).
  6. The Crucial Resting Period: Once your steak reaches the target internal temperature, immediately remove the pan from the oven. Using tongs, transfer the steak to a clean plate. Don’t let those flavorful pan juices go to waste – use a pastry brush to coat the steak with any remaining juices in the skillet. This adds an extra layer of flavor. Loosely tent the plate with aluminum foil.
  7. Rest the Steak: Allow the steak to rest for a minimum of 3 minutes. This resting period is non-negotiable! It allows the juices, which have been pushed to the center during cooking, to redistribute throughout the meat, resulting in a more tender, succulent, and flavorful steak. Skipping this step will result in juices running out when you cut into it, leaving your steak dry.
  8. Serve Warm and Enjoy: Once the resting time is complete, your perfectly cooked oven steak is ready to be sliced and served! Enjoy every flavorful bite.

Once cooked, leftover steak can be stored in a sealed container in the refrigerator for up to 3 days. For longer storage, you can freeze it for up to 3 months. I recommend slicing, dicing, or shredding the steak before freezing for easier future use in other dishes like tacos, salads, or stir-fries.

**Important Note on Ventilation:** Cooking steak at high heat will definitely generate a significant amount of smoke. Always ensure good ventilation in your kitchen. Turn on your exhaust fan or open a window (or both!) to minimize smoke and keep your kitchen air fresh.

While I’m a big proponent of the simple garlic powder, salt, and pepper mix for steak, its versatility allows for endless flavor customization. This classic blend truly complements almost any cuisine. For a slight twist, I often substitute regular kosher salt with seasoned salt for an added layer of flavor.

However, don’t hesitate to unleash your creativity! Feel free to incorporate any of your favorite dry seasoning mixes. Consider a smoky paprika blend, a zesty lemon-herb rub, or even a bold coffee rub for a unique depth of flavor. Description

My favorite method for how to cook steak in the oven. Oven-broiled steak is surprisingly easy to prepare and cook to your desired degree of doneness, and just as delicious as ever!

Ingredients

  • 2 good-quality steaks, room temperature, ideally about 1 to 1.5-inches thick (such as filet mignon, rib eye, T-bone, strip steak, sirloin, flank steak, or your preferred cut of steak)
  • 2 tablespoons high-heat oil (such as avocado oil)
  • 1 teaspoon fine sea salt (or seasoned salt)
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat broiler on your oven. Let the steaks rest on a plate until they have fully reached room temperature.
  2. In a small bowl, whisk together the salt, pepper, and garlic powder until combined. Set aside.
  3. Blot the steaks dry with paper towels. Then brush evenly on both sides with oil, and sprinkle the seasoning mixture evenly on both sides of the steaks.
  4. Meanwhile, heat a cast iron skillet (or oven-safe sauté pan) on the stove over high heat for 6-8 minutes. Once the pan is super-hot, add the steaks and use a spatula to press them evenly into the pan, so that the entire bottom surface of the steaks makes contact with the pan. Cook for 30 seconds.
  5. Carefully use tongs to flip the steaks. Then use an oven mitt to carefully transfer the skillet to the oven. Broil for 3 minutes. Then flip the steaks once more, and continue baking for 2-3 minutes more, or until the internal temperature of steak reaches 5 degrees below your desired level of doneness (see chart below, I recommend measuring the temperature with an oven-safe meat thermometer). The steak will continue cooking a bit after you remove it from the oven.
  6. Once the steaks are ready to go, immediately remove the pan from the oven, and transfer the steaks to a clean plate. Brush any of the pan juices onto the steak. Then loosely tent the plate with aluminum foil and and let the steak rest for at least 3 minutes.
  7. Serve warm. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

Achieving Perfect Doneness: The internal temperatures for steak are crucial for achieving your preferred level of doneness. Always measure in the thickest part of the steak. Remember to remove the steak from the oven when it reaches about 5°F (3°C) *below* the desired final temperature, as carryover cooking will continue to raise the temperature during resting:

  • Rare: 125°F (52°C) – Remove from the oven at 120°F (49°C).
  • Medium-Rare: 135°F (57°C) – Remove from the oven at 130°F (54°C).
  • Medium: 145°F (63°C) – Remove from the oven at 140°F (60°C).
  • Medium-Well: 150°F (66°C) – Remove from the oven at 145°F (63°C).
  • Well Done: 160°F (71°C) – Remove from the oven at 155°F (68°C).

FDA Recommendation: For food safety, the U.S. FDA recommends that steak be cooked to an internal temperature of 145°F (63°C) and allowed to rest for 3 minutes.
