Chocolate Peanut Butter Cupcakes ready for sharing

The Joy of Baking and Sharing Sweet Treats

My chocolate peanut butter cupcakes clearly fit into the “desserts” category, though I won’t deny enjoying one for breakfast this morning (it’s December, after all, and I’m active!). The true joy, however, comes from sharing these delightful treats. I took a batch to my local coffee shop, where one enthusiastic patron devoured it in three bites, while another declared it the best cupcake he’d ever tasted – a true bingo moment! Then, I knocked on neighbors’ doors, delivering smiles and cupcakes, watching their eyes light up at the mere mention of peanut butter and chocolate.

Later, the final batch joined us for a Mexican dinner with friends. We quickly concluded that chocolate peanut butter cupcakes are, in fact, the perfect dessert following tamales, chips, salsa, and margaritas. Who would have thought?! This experience truly underscored the simple pleasure of baking during the holidays – especially with good company, like Maria and Rolfe, and sharing delicious food with loved ones. These cupcakes also proved surprisingly easy to make, particularly with the optional “surprise inside.” Here’s how you can make them:

Ingredients for Chocolate Peanut Butter Cupcakes

Baking with Quality: Gold Medal Flour

Our journey to perfect cupcakes begins with our esteemed sponsor for the Virtual Bake Day: Gold Medal Flour. For this recipe, I used their reliable all-purpose flour, a staple that ensures consistent results and delicious textures in your baked goods.

The Secret “Surprise Inside”: Reese’s Peanut Butter Cups

If you’re looking to elevate these cupcakes to an even more extraordinary level, consider adding a delightful peanut butter chocolate “surprise inside.” This involves unwrapping about 24 mini Reese’s peanut butter cups. While I opted for the mini size, feel free to use full-size cups if you prefer. Of course, you can always skip this step for a classic chocolate cupcake, but I wholeheartedly recommend including these little gems for an extra burst of flavor and texture.

Next, prepare your rich chocolate cake batter. I used dark chocolate cocoa for an extra deep, luxurious flavor – my absolute favorite!

Once your liners are ready, spoon a small amount of cupcake batter into each, then nestle a mini Reese’s peanut butter cup on top. *Pro Tip: I’ve found it works best to place the peanut butter cups *on top* of a small layer of batter, rather than at the very bottom, to help prevent them from burning and ensure they melt perfectly into the center of the cupcake.* I typically use an ice cream scoop for consistent cupcake filling. For this recipe, I simply adjusted the batter amount by eye to account for the size of the Reese’s cup. It worked like a charm!

Peanut Butter Frosting for Cupcakes

While your cupcakes are baking to perfection, take the opportunity to whip up a batch of the incredibly easy and unbelievably delicious peanut butter frosting. This creamy topping is the perfect complement to the rich chocolate base.

After the cupcakes have baked and cooled completely to room temperature, it’s time for the best part: adding generous amounts of frosting! You can simply spread it on with a knife for a rustic look, or for a more elegant finish, use a piping bag as I did (I used Wilton Tip 1M for that classic swirl).

And now, before you’re tempted to take a million more photos, just dive in! Can you spot that little “surprise” inside? That, my friends, is what we call a true winner.

Some say the swirly frosting technique is going out of style, but I wholeheartedly disagree. It’s incredibly easy to achieve, makes cupcakes look beautifully professional, and offers a generous amount of that delectable peanut butter frosting. So, I’m sticking with it! The visual appeal perfectly matches the irresistible taste.

You can choose to leave them elegantly plain, as I primarily did for a clean, classic look…

Or, if you’re feeling a bit more indulgent and fancy, a delicate drizzle of melted chocolate can add an extra touch of visual appeal and flavor. While this was my original plan for the batch, I found myself drawn to the simple, clean aesthetic even more. Regardless of your choice, you truly can’t go wrong with these cupcakes. They were an absolute hit with my friends and a wonderful contribution to the Gold Medal Flour Virtual Bake Day!

Chocolate Peanut Butter Cupcakes Recipe

These peanut butter cupcakes are rich, delicious, and even come with a little “surprise” inside!

  • Prep Time: 20 minutes
  • Cook Time: 20 minutes
  • Total Time: 40 minutes
  • Yield: About 24 cupcakes

Ingredients

Cupcake Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract (store-bought or homemade)
  • 1 1/2 cups all-purpose flour (I recommend Gold Medal Flour)
  • 1/2 cup unsweetened cocoa powder (dark chocolate cocoa powder for a richer flavor)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup buttermilk
  • 1/2 cup lukewarm coffee (decaf coffee can be used if preferred)
  • 24 mini peanut butter cups, unwrapped (Reese’s are ideal)
  • (Optional: melted chocolate for drizzling)

Peanut Butter Frosting Ingredients:

  • 2 cups creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 tsp. vanilla extract (store-bought or homemade)
  • 2 cups powdered sugar
  • 1/4 tsp. salt
  • 1/4 cup heavy cream

Instructions

To Make The Chocolate Peanut Butter Cupcakes:

  1. Preheat your oven to 375°F (190°C). Line two standard 12-cup muffin tins with paper baking liners, for a total of 24 cups. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or using a large bowl and an electric hand mixer, cream together the softened butter and granulated sugar until the mixture is light, fluffy, and pale in color. This process usually takes 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed. Stir in the vanilla extract.
  4. In a separate medium-sized bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until thoroughly combined.
  5. In another small bowl, gently stir together the buttermilk and lukewarm coffee.
  6. Alternately add the dry ingredients and the wet ingredients (buttermilk and coffee mixture) to the creamed butter mixture, beginning and ending with the dry ingredients. Beat on low speed after each addition just until combined. Be careful not to overmix the batter, as this can result in tough cupcakes.
  7. Fill each prepared baking cup about one-third full with the chocolate cupcake batter. Then, gently nestle one unwrapped mini peanut butter cup directly on top of the batter in each liner. Carefully spoon additional batter over the peanut butter cups until each cup is nearly two-thirds full. This ensures the peanut butter cup is encased and melts beautifully into the center.
  8. Bake for 15-20 minutes, or until a wooden toothpick inserted into the center of a cupcake (avoiding the peanut butter cup) comes out clean.
  9. Allow the cupcakes to cool in the muffin tins for about 10 minutes before carefully transferring them to a wire rack to cool completely. Ensuring they are fully cool before frosting is crucial for preventing the frosting from melting.

To Make The Creamy Peanut Butter Frosting:

  1. In a large bowl, using an electric mixer, beat the creamy peanut butter, room temperature butter, and vanilla extract together on medium speed until the mixture is well combined and smooth, about 2 minutes.
  2. Gradually add the powdered sugar and salt to the peanut butter mixture, beating on low speed until all ingredients are incorporated and no dry streaks remain.
  3. Pour in the heavy cream and increase the mixer speed to medium-high. Beat for an additional 1-2 minutes until the frosting is light, fluffy, and wonderfully smooth.
  4. Once the cupcakes are completely cooled, generously pipe or spread the peanut butter frosting on top. For an extra special touch, you can optionally drizzle a bit of melted chocolate over the frosted cupcakes.

Expert Tips for Flawless Chocolate Peanut Butter Cupcakes

  • Room Temperature Ingredients: Ensure your butter and eggs are at room temperature. This allows them to emulsify properly, creating a smoother, more uniform batter and a lighter, fluffier cupcake.
  • Do Not Overmix: Overmixing can develop the gluten in the flour too much, leading to tough, dense cupcakes. Mix just until ingredients are combined.
  • Quality Cocoa Powder: Using a high-quality cocoa powder, especially dark chocolate cocoa, significantly impacts the depth of flavor in your cupcakes.
  • Lukewarm Coffee: The coffee enhances the chocolate flavor without making the cupcakes taste like coffee. Lukewarm helps it blend seamlessly into the batter.
  • Cool Completely: Patience is key! Frosting warm cupcakes will cause the frosting to melt and slide off. Always allow cupcakes to cool fully on a wire rack.
  • Peanut Butter Cup Placement: Placing the Reese’s cup on top of a small amount of batter, then covering it, ensures it melts into a delightful surprise without burning on the bottom of the liner.
  • Frosting Consistency: If your frosting is too thick, add a tiny bit more heavy cream (1 teaspoon at a time). If it’s too thin, add a tablespoon of powdered sugar.
