This past weekend marked the culmination of years of hopes and prayers, a truly special occasion that finally arrived. My dear friend, Cameron, got married, and it was an event filled with laughter, tears, and an abundance of memorable moments.

The entire weekend, from its joyous beginning to its reflective end, was punctuated by the comforting simplicity of fresh arugula pesto pasta. But before we delve into the culinary delights, I want to share why this wedding held such profound significance, both for Cameron and for those of us who have journeyed alongside him.

A Friendship Forged in Harmony: Eight Years of Shared Journey

It feels like just yesterday I was fresh out of college, navigating a world that felt bright, new, and full of possibility. I had recently moved to a new city, taken on a challenging role at one of the largest churches I had ever encountered, and eagerly embraced leading a contemporary choir. While my collegiate experience included a modern worship band, my true musical roots, and extensive training, were firmly planted in classical voice – yes, I was an opera major! Despite the thrilling, loud guitars and drums that defined our weekly worship, a part of me always yearned for the familiar comfort of classical music.

Then, an email landed in our department. It was from another recent college graduate, inquiring about an audition for the choir. His claim of loving both classical and contemporary singing immediately piqued our curiosity. We arranged a standard audition around our grand piano. However, the moment Cameron opened his mouth to sing, we knew this was no ordinary talent.

Cameron possesses one of the most remarkable voices I have ever heard. His range and versatility are astounding; he can effortlessly transition from the operatic power of Pavarotti to the smooth crooning of Sinatra, and then to the contemporary charm of Jason Mraz, always delivering a performance that truly captivates and astonishes. His voice is a gift, a rare blend of technical precision and heartfelt expression.

Our music director, recognizing a unique opportunity, paired us to perform the classical Andrea Bocelli and Charlotte Church arrangement of “The Prayer.” This was a deliberate move to break away from the contemporary norm and offer the congregation a truly special musical experience. Singing that piece for the first time at age 22, and then countless times over the years, including our recent performance just weeks ago at age 30, has always been an immense thrill. There are rare moments in a musician’s life when you just “click” with another performer, and for me, whenever I venture back into the world of classical duets, Cameron is the partner I instinctively hope for. Our voices blend with an effortless synergy that is both rare and deeply rewarding.

Beyond his extraordinary vocal talent, which he diligently maintains, Cameron is a man of exceptional character. He is profoundly respected by everyone who knows him for his unparalleled humility, graciousness, and unwavering encouragement. He is, quite simply, salt of the earth – a truly good and honorable person whose presence enriches every interaction.

One of my favorite memories of Cameron singing. Our small choir had the incredible opportunity to perform for over 12,000 people at a national choir competition. After our song, Donald Lawrence specifically called out Cameron, asking him to “just sing one more riff” for the massive crowd. The response was thunderous applause, and of course, Cameron handled it with his characteristic humility.

Over the past eight years, our friendship deepened through countless shared experiences. From serving together at church to performing at innumerable weddings, funerals, and concerts, and even becoming workout partners when we both lived near the Plaza in Kansas City, I’ve had the privilege of getting to know Cameron incredibly well. We’ve navigated the professional highs and lows of my job, delved into his captivating stories from medical school, and, of course, shared endless laughs and a few empathetic tears over a long line of setups and dates that never quite led to what we hoped.

A Match Made in Heaven: Cameron and Emily’s Story of Love and Resilience

Despite the many dates, I always had a strong intuition that Cameron would eventually find his life partner in his hometown. And indeed, almost two years ago, my suspicion proved true. During a casual walk one evening, he shared the exciting news: he was heading back to Joplin, Missouri, to go on a date with a girl he had reconnected with from high school. Though they hadn’t truly known each other growing up, from that very first date, it was undeniably clear that Emily was someone he profoundly wanted to know. Our usual post-date debrief, often met with a resigned shake of the head, was different this time. I vividly recall his beaming smile and immediate, enthusiastic declaration that the date was “absolutely great,” and he couldn’t wait to see her again.

The moment we all met Emily, it was evident they were a match truly made in heaven. Emily is sweet, genuinely caring, remarkably intelligent, and wonderfully funny. Adding to the serendipity, her parents and Cameron’s parents had been friends for years! For two individuals who hold family connections in such high regard, their union couldn’t have been more perfect, a true blending of two families.

However, a few months into their blossoming relationship, our world stopped spinning with a devastating text message one night. Cameron’s 26-year-old newlywed brother had been tragically killed in a car wreck. The grief was unimaginable, a story of loss almost beyond belief. With Emily steadfastly by his side, Cameron and his parents sat in the front row of the funeral service, demonstrating incredible strength. Through their profound grief and tears, they courageously celebrated a life well-lived, holding onto the hope that they would one day be reunited with him.

The year and a half that followed that day was a challenging journey, marked by both profound sorrow and glimmers of hope. But this past weekend, we gathered once more in the same church, surrounded by the same dear friends, for what felt like a truly profound and joyous reunion: Cameron and Emily exchanged their vows and officially became husband and wife! Cameron was all smiles, Emily radiated pure happiness, and there wasn’t a dry eye in the house as they finally said their “I do’s” after such a long and meaningful wait. My friends and I were, admittedly, happy, teary wrecks, but I managed to compose myself enough to sing our classic song with his old vocal instructor, the very person who sent us that fateful recommendation letter years ago. The undisputed musical highlight of the wedding, however, came when — you guessed it — Cameron delivered a surprise serenade to his beautiful bride, singing a gorgeous rendition of “Always.” That wedding will undoubtedly be etched in history as an exceptionally special day, a beacon of hope and love after profound loss.

On a slightly more dramatic note, another hugely memorable moment of the weekend involved getting completely disoriented on the streets of Joplin while tornado sirens blared menacingly. People were driving like maniacs as we desperately tried to reach our hotel, battling the chaos and uncertainty. Once inside the hotel, the deafening sirens continued to wail, and the unsettling realization that there was no basement to take shelter in was less than comforting. Thankfully, the town was spared this time, and we all safely made it to the church on time, albeit with a heightened sense of urgency and relief.

Amidst all the emotional highs and unexpected adventures of the wedding weekend, I simply must get back to the heart of food blogging and share with you the most wonderful arugula pesto pasta I recently created. I’ve been making homemade pesto for years, and for just as long, I’ve been a huge admirer of arugula’s distinct peppery flavor. Yet, it wasn’t until recently that I decided to combine these two loves into a vibrant pesto. The moment felt right.

I prepared a generous batch to savor right before my departure for Joplin and took some on the road. The remaining leftovers were a delicious, welcoming sight upon my return to Kansas City. Let me tell you, if you appreciate the unique taste of arugula, this recipe is every bit as delightful and straightforward as you might imagine. It has instantly become a new favorite that I eagerly anticipate making again and again.

Arugula Pesto Pasta

Fresh arugula forms the base for this delightfully simple and flavorful pesto, perfect for pasta!


Ingredients

  • 1 pound dried pasta (such as linguine or spaghetti)
  • 5 ounces baby arugula, thoroughly washed and dried
  • 6 large garlic cloves, peeled for maximum flavor
  • 1 cup pine nuts, toasted to bring out their nutty essence, divided
  • 1/2 cup freshly grated Parmesan cheese, with extra for serving
  • Juice of half a fresh lemon, for brightness
  • 2/3 cup high-quality extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Bring a large pot of generously-salted water to a rolling boil. Cook the dried pasta according to package directions until it reaches a perfect al dente texture.
  2. While the pasta cooks, prepare the arugula pesto. In a food processor, combine the washed arugula, peeled garlic cloves, 2/3 cup of the toasted pine nuts, grated Parmesan cheese, and the fresh lemon juice. Pulse the ingredients until they are well combined and finely chopped. With the food processor running, slowly drizzle in the extra-virgin olive oil until the pesto is smooth and emulsified. Season with salt and pepper to taste.
  3. Once the pasta is al dente, reserve about 1/2 cup of the starchy pasta water, then drain the remaining water. Immediately return the hot, drained pasta to the pot. Add the freshly made arugula pesto and the remaining pine nuts. Toss thoroughly to coat the pasta evenly. If the pesto seems too thick, add a tablespoon or two of the reserved pasta water to achieve your desired consistency.
  4. Serve the Arugula Pesto Pasta immediately, garnished with an extra sprinkle of grated Parmesan cheese. For a more complete meal, this flavorful pasta pairs wonderfully with grilled shrimp, pan-seared scallops, or sliced grilled chicken breast.
