There are some weeks that just begin with an overflowing sense of gratitude and joy, and this past weekend certainly set that tone for me. It was a beautiful tapestry woven from all the simple, profound pleasures life has to offer: genuine connection, invigorating outdoor moments, culinary adventures, and the unifying power of music. These are the threads that truly enrich our days, making every moment feel vibrant and meaningful.

My weekend started with spontaneous coffee catch-ups, a series of conversations that flowed effortlessly between heartfelt confessions and lighter, more whimsical topics—like the delicate art of icing a cinnamon roll. These deep, yet delightfully varied discussions with cherished friends are truly among life’s greatest gifts. I also embraced the summer sunshine with long, leisurely walks, soaking in the warmth and beauty of the season. Our neighborhood grill saw plenty of action, bringing neighbors together over sizzling food and laughter. A much-needed “introvert’s night in” offered a perfect counterpoint, complete with comforting pasta, a glass of wine, and a good movie shared with my furry companion.

One particularly memorable experience involved my ESL student and her family, who generously prepared an incredible tamarind-chicken stew. When I politely declined my “American fork” and expressed a desire to learn their traditional Burmese eating style—using only hands—it transformed into an unexpectedly hilarious, delightful, and truly memorable shared meal. Such moments of cultural exchange and genuine hospitality are truly invaluable. And, of course, the simple luxury of sleeping in each morning felt absolutely glorious, providing a refreshing start to each day.

But without a doubt, the pinnacle of the weekend was Sunday night. For the past six months, I’ve had the immense pleasure of practicing with a new band, an experience that has been nothing short of an absolute blast. We call ourselves The Nightingale Orchestra, a nod to our late-night rehearsals when the world quiets down and music takes flight. Our group comprises eleven incredibly talented musicians: five string players, three guitarists, two keyboardists, and a drummer. We immerse ourselves in deeply beautiful and wonderfully creative songs penned by our friend, Micah.

After a significant musical hiatus following my departure from my previous worship-leading role, this group has been a powerful reminder of the sheer thrill of creating music collaboratively. Especially when surrounded by such cool, kind, and gifted individuals. Especially when we’re working on songs that resonate deeply with all of us. And especially when we finally get to perform those cherished songs live, sharing our passion with a packed audience of friends and community. Oh, I think I’m still grinning from ear to ear just thinking about it. It was a truly fun, awesome, and precious gift of a night, leaving my heart full and my spirit soaring.

MARINADE INGREDIENTS:

  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce*
  • 3 tablespoons olive oil
  • 3 tablespoons rice wine vinegar
  • 1/4 tsp. coarsely-ground black pepper
  • 1 tablespoon finely-chopped fresh ginger

BRUSHING SAUCE INGREDIENTS:

  • 2 tablespoons low-sodium soy sauce*
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil

ASIAN PEPPER STEAK KABOBS INGREDIENTS:

  • 1 lb. flank steak or sirloin steak, cut into 1-inch bite-sized pieces
  • 1 large bell pepper, cored and cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • metal or wooden skewers (*if using wooden skewers, be sure to soak them in water for at least 10 minute prior to using)
  • optional garnishes: thinly-sliced green onions and toasted sesame seeds

Instructions

To make the marinade:

  1. Whisk all ingredients together until combined.

To make the brushing sauce:

  1. Whisk all ingredients together until combined.

  1. Combine the prepared marinade and steak pieces in a large bowl, and toss to combine.  Cover and refrigerate for between 1-4 hours.
  2. Heat grill to medium-high heat.  Thread skewers alternately with the marinated steak, peppers and onions.  Brush each skewer liberally with the marinade (not the brushing sauce).  Then grill for 2-3 minutes per side, turning once, or until the steak is cooked to your desired level of doneness.  Remove skewers from grill and let rest for 5 minutes.  Then brush each skewer with the brushing sauce.
  3. Serve immediately.

Notes

*If making this recipe gluten-free, substitute gluten-free soy sauce (or tamari).
