The air in Kansas City yesterday was absolutely electric! For the first time in an incredible 29 years, our beloved Royals are heading to the World Series! The excitement was palpable, a wave of collective joy washing over the city as we celebrated this historic achievement. Thinking back to the last time the Royals played in the World Series, in 1985, I was just a little one, probably more focused on my favorite pumpkin suit or the adventures of Elmo than the intricacies of baseball. But even then, the spirit of victory and shared excitement was undoubtedly in the air. Fast forward to yesterday, and the experience was vividly different yet equally thrilling.

Twenty-nine years later, I found myself packed into a lively midtown dive bar with a dozen friends and what felt like the entire city of Kansas City. The atmosphere was a whirlwind of cheers, shared food, and the infectious “Let’s-Go-Royals-clap-clap-clapclapclap” chant. The moment the Royals secured their win was absolutely unforgettable – a collective roar of disbelief and pure jubilation. Kansas City truly won, and we’re going to the World Series!
I’m convinced that the joyous uproar from Kansas City yesterday could have echoed all the way to the moon. It was an exhilarating experience, made even better by a few incredible highlights. My former student, Gracie, delivered a stunning rendition of God Bless America in the 7th inning, a moment that filled me with immense pride. Adding to the star power, Paul Rudd returned to town for the game, bringing his signature enthusiasm. This is my favorite recipe for classic 7 Layer Dip. It’s fresh, colorful, and always a winner with a crowd!
Ingredients

- 1 (16-ounce) container sour cream (2 cups)
- ¼ cup (1 packet) Old El Paso taco seasoning
- 2 (15-ounce) cans Old El Paso refried beans
- 3 cups freshly-made guacamole
- 2 cups shredded Mexican cheese
- 2 cups cherry or grape tomatoes, halved
- ½ cup sliced (drained) black olives
- ⅓ cup diced red onion
- ¼ cup thinly-sliced green onions
- ¼ cup fresh roughly-chopped cilantro leaves
Instructions
- In a small bowl, whisk together sour cream and taco seasoning until thoroughly combined. Set aside.
- Spread the refried beans out in an even layer in the bottom of a 9×13-inch baking dish. Layer the guacamole in an even layer on top of the beans, followed by a layer of the sour cream mixture, then the cheese, tomatoes, olives, red onion, and green onions. Then sprinkle the cilantro evenly on top of the green onions.
