  • 1 egg white, whisked
  • 1 batch cream cheese spread/glaze (see below)
  • 2 cups fresh blueberries
  • 1 cup Blue Diamond Oven-RoastedBlueberryAlmonds, roughly-chopped
  • 2/3 cup toasted coconut flakes

Cream Cheese Spread/Glaze Ingredients:

  • 1/2 cup low-fat cream cheese, softened
  • 1/2 cup non-fat plain Greek yogurt
  • 2-3 tablespoons honey (add more/less to taste)
  • 1 teaspoon vanilla extract, store-bought or homemade
  • (add later: 1-3 teaspoons milk for glaze)

Instructions

  1. To Make The Blueberry Almond Tart:
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper, and set aside.
  3. Lay out the thawed puff pastry sheet on a lightly floured surface. Gently use a rolling pin to even out the creases and roll it out until it forms approximately an 11 x 18-inch rectangle. Transfer the puff pastry to the prepared baking sheet. Use a knife to score a very thin border (about 1/2 inch) around the outside of the puff pastry. Then, use a fork to poke numerous holes into the middle of the pastry, which helps minimize inflation during baking.
  4. Use a pastry brush to lightly brush the whisked egg whites all over the top of the puff pastry, ensuring an even coating for a golden finish. Transfer it to the oven and bake according to package directions until it turns golden brown, typically about 10-12 minutes. Keep a close eye on it while baking to ensure it doesn’t puff up excessively; if it does, simply pull it out of the oven and use a spatula to gently pat it back down until it’s flat, repeating if necessary. Remove from oven and let cool for 5 minutes.

  7. Slice the tart into servings and serve immediately for the best fresh flavor and texture.
  8. To Make The Cream Cheese Spread/Glaze:
  9. In a medium bowl or measuring cup, whisk all ingredients for the spread (low-fat cream cheese, Greek yogurt, honey, and vanilla extract) together until the mixture is completely smooth and free of lumps. Taste and adjust sweetness by adding extra honey if desired.
  10. Transfer approximately 1/4 cup of the prepared cream cheese spread mixture to a separate small bowl. To this reserved portion, whisk in milk one teaspoon at a time until the mixture reaches a thinner, glaze-like consistency that can be easily drizzled. (If you accidentally add too much milk and it becomes too thin, you can add a few spoonfuls of powdered sugar to thicken it up.)
