Mastering Crispy Slow Cooker Carnitas: A Culinary Journey

The journey to perfecting these crispy pork carnitas in a crock pot began for me back in 2012. I had previously learned the traditional method of making carnitas from a friend from Mexico, a method that involved hours of attentive simmering on the stove, followed by multiple rounds of baking and turning in the oven. While the flavors were undeniably authentic and delicious, the process was labor-intensive, requiring a significant time commitment. This experience, while enlightening, often led me to opt for enjoying carnitas at restaurants rather than attempting them at home.

However, the discovery of the slow cooker method completely revolutionized my approach to making this beloved Mexican dish. It was a true game-changer, transforming a complex, time-consuming recipe into something wonderfully accessible for weeknight dinners and weekend gatherings alike. This ingenious technique maintains all the rich, savory depth of traditional carnitas with a fraction of the effort.

The beauty of this slow cooker carnitas recipe lies in its simplicity. You begin by adding generous chunks of pork to your slow cooker, accompanied by a handful of carefully selected, aromatic Mexican seasonings. As the pork slowly cooks over several hours, it becomes incredibly tender, infused with flavor, and wonderfully juicy. The low and slow cooking process breaks down the connective tissues in the pork, resulting in meat that practically melts in your mouth. Once cooked, a simple shredding with a fork is all it takes to prepare the meat for its final, crucial step.

While you could certainly enjoy the tender, shredded pork as is, the true magic of “carnitas” — meaning “little meats” — comes from achieving those coveted crispy edges. This is where our secret weapon, the broiler, comes into play. After the pork has slow-cooked to perfection and has been shredded, spread it out in a single, even layer on foil-covered baking sheets. Ensuring a single layer is key, as it allows the heat to evenly crisp up the meat. Then, place the baking sheet under a hot broiler for about 5 minutes. Watch closely as the edges of the pork transform into beautifully browned, crunchy morsels.

Once the first round of crisping is complete, remove the sheet from the oven and, here’s another crucial tip, ladle about ¼ cup of the reserved cooking juices from the slow cooker over the pork. Give it a good toss with tongs to ensure every piece is coated in that rich, flavorful liquid. This re-moisturizes the pork while adding another layer of flavor and helps it achieve even more crispiness in the next broiling round. Pop it back under the broiler for another 5 minutes, or until it reaches your desired level of crispness. A final drizzle of juices and a sprinkle of fresh chopped cilantro (if you wish) complete this mouthwatering transformation, creating the perfect balance of tender and crispy textures.

This exquisite crispy pork is incredibly versatile, ready to be the star of countless delicious meals. Imagine it tucked into warm corn tortillas for authentic carnitas tacos, piled high in a hearty burrito, melted into a cheesy quesadilla, or even as a flavorful topping for a fresh salad. It also shines in more unique dishes, like a comforting carnitas soup or even a breakfast hash.

And let’s be honest, there’s absolutely no shame in enjoying a forkful (or ten) straight from the baking sheet. The combination of succulent, slow-cooked pork and those intensely flavorful crispy bits is truly addictive.

I am genuinely convinced that this simplified slow cooker method yields carnitas that are just as flavorful and satisfying as those prepared through traditional, time-consuming techniques. Beyond the convenience, this recipe offers several advantages. You have complete control over the ingredients, ensuring a wholesome meal free from unwanted additives. You can customize the spice level to suit your preference, making it as mild or as fiery as you desire. Furthermore, this recipe makes a generous batch, perfect for feeding a crowd at your next gathering or for ensuring plenty of delicious leftovers for easy meal prep throughout the week. Imagine having a ready supply of this incredible Mexican pulled pork for quick lunches or dinners!

Choosing the right cut of pork is also essential for perfect carnitas. A lean boneless pork roast, such as pork shoulder or pork butt, works best as it has enough fat to render down and keep the meat moist during the long cooking process, contributing to that rich, authentic flavor. Trimming excess fat before cooking helps prevent the final dish from being overly greasy, allowing the seasonings to truly shine.

This recipe for Crispy Slow Cooker Carnitas is more than just a meal; it’s a celebration of delicious, easy-to-make Mexican cuisine. And if you find yourself enjoying this delectable pork for multiple meals over a weekend, rest assured, you have my complete and enthusiastic support. Happy cooking!

Description

A flavorful and easy way to make tender, juicy, and crispy carnitas using your slow cooker! This recipe simplifies the traditional process without compromising on authentic Mexican taste and texture.

Ingredients

Scale

  • 1 (4-5 pound) lean boneless pork roast (pork shoulder or pork butt recommended), excess fat trimmed, cut into 3-inch chunks
  • 1 cup beer (or chicken stock for an alcohol-free alternative)
  • 1 medium white onion, diced
  • 4 cloves garlic, peeled and minced
  • 1 tablespoon chipotle powder (or 1 chipotle in adobo sauce, minced, for extra smoky flavor)
  • 2 teaspoons ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons fine sea salt

Instructions

  1. Combine all ingredients: Add the pork chunks, beer (or chicken stock), diced white onion, minced garlic, chipotle powder, ground cumin, black pepper, chili powder, and sea salt to a large slow cooker. Stir gently to ensure all the pork is well coated with the seasonings.
  2. Slow cook for tenderness: Cover the slow cooker and cook on the low setting for 6-8 hours, or on the high setting for 4-5 hours. The pork is ready when it is exceptionally tender and can be easily shredded with a fork.
  3. Prepare for crisping: Once the pork is cooked, preheat your broiler to high heat. Line two baking sheets with aluminum foil for easy cleanup. Using a fork, shred the tender pork into bite-sized pieces. With a slotted spoon, carefully transfer the shredded pork to the prepared baking sheets, spreading it out into a single, even layer. Make sure to leave the delicious cooking juices behind in the slow cooker – these are vital for the next step!
  4. First broil and baste: Place one baking sheet of pork under the preheated broiler for approximately 5 minutes, or until the edges of the pork begin to brown and crisp up. Keep a close eye on it, as broilers can vary and crisp quickly. Remove the sheet from the oven. Ladle about 1/4 cup of the reserved juices from the slow cooker evenly over the crispy pork, then toss it thoroughly with tongs to coat.
  5. Second broil for ultimate crispiness: Return the baking sheet to the broiler for an additional 5 minutes, or until the meat reaches your desired level of crispness and develops those coveted “burnt ends.” Remove from the oven and ladle another 1/4 cup of the broth over the pork, tossing again.
  6. Repeat and serve: Repeat steps 4 and 5 with the second baking sheet of pork. Serve your perfectly crispy slow cooker carnitas immediately in tacos, burritos, salads, quesadillas, or any way you desire! This flavorful pork can be refrigerated in an airtight container for up to 3 days or frozen for up to 3 months for future meals.

Notes

*This recipe was initially published and later edited in August 2017 to simplify the preparation even further. The original version included a step to sear the pork before adding it to the slow cooker. However, after extensive testing, I discovered that this initial searing step is not actually necessary, as the pork achieves its desired crispiness and browning perfectly under the broiler after slow cooking. This adjustment makes the recipe even more convenient without compromising on flavor or texture. Enjoy your perfectly tender and crispy carnitas!
