There’s nothing quite like a steaming bowl of homemade chili to warm you from the inside out, especially when it’s made effortlessly in a slow cooker. This recipe for classic slow cooker chili has earned a special place in my heart, and frankly, in my kitchen, becoming a symbol of good times and even good luck. It was a crazy, awesome, and absolutely unforgettable night, and this “victory chili” was right there with us, fueling the excitement.

While I’ve confessed in the past that ground beef isn’t always my top choice, I know it’s a staple for many, especially when it comes to chili. So, I happily made this batch with lean ground beef, and it received resounding approval from everyone. This classic slow cooker chili recipe is easy to make, and so comforting! Perfect for game days, chilly evenings, or any time a chili craving hits, it delivers rich, hearty flavors with minimal effort.

- 1 Tablespoon olive oil
- 2 pounds lean ground beef (or ground turkey/chicken for substitution)
- 1 medium red or yellow onion, peeled and diced
- 4 cloves of garlic, minced
- 1 chipotle chili in adobo sauce, chopped (*add more for extra smokiness and heat)
- 2 (15 ounce) cans dark red kidney beans, rinsed and drained (**see notes below for substitution ideas)
- 2 (15 ounce) cans tomato sauce
- 2 (15 ounce) cans diced tomatoes
- 1 (15 ounce) can light red kidney beans, rinsed and drained
- 1 (4 ounce) can chopped green chiles
- 1 cup beer or beef broth
- 2 Tablespoons chili powder
- 1 Tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- (Optional toppings: shredded cheddar cheese, crushed tortilla chips or strips, thinly-sliced green onions, sour cream, salsa, fresh cilantro, avocado)
Instructions
- Heat olive oil in a large sauté pan over medium-high heat. (Alternatively, if using the Crock-Pot slow cooker with stovetop-safe pot, heat oil directly in the ceramic bowl on the stove over medium-high heat.) Add the ground beef (or preferred alternative), diced onion, and minced garlic. Cook for approximately 7-10 minutes, or until the beef is thoroughly browned, breaking it up with a spoon as it cooks. Carefully drain and discard any excess fat or grease. If using a separate sauté pan, transfer the browned beef and onion mixture into the bottom of your slow cooker. If using the stovetop-safe Crock-Pot bowl, simply return the bowl to the slow cooker base.
- Add all the remaining ingredients (chipotle chili, kidney beans, tomato sauce, diced tomatoes, green chiles, beer or broth, chili powder, cumin, salt, sugar, and black pepper) to the slow cooker with the browned meat and onions. Stir everything thoroughly to ensure all ingredients are well combined and evenly distributed. Cover the slow cooker with its lid and cook on the “low” setting for 6-8 hours, or on the “high” setting for 3-4 hours. Cooking times may vary slightly, so check for desired consistency and tenderness.
- Once cooked, carefully taste the chili. Adjust seasonings as needed, adding more salt, pepper, chili powder, or other spices to achieve your perfect flavor balance. Serve the chili warm, allowing guests to customize their bowls with a selection of desired toppings such as shredded cheddar cheese, crushed tortilla chips, thinly-sliced green onions, a dollop of sour cream, or fresh salsa.
Notes
*For a smoky kick without excessive heat, I used about 3 chipotle peppers, but did not add any extra adobo sauce to maintain a balanced spice level. Feel free to adjust the quantity of chipotle peppers to your liking, or include a dash of adobo sauce for more intensity.
**If kidney beans are not to your taste, you can easily substitute them with an equal amount of black beans, pinto beans, or great northern beans for a different texture and flavor profile.
