Our “Tomato Love” initiative isn’t just about sharing delicious recipes; it’s also about shining a light on the incredible progress being made to ensure that the food we enjoy is cultivated with dignity and fairness. This entire project was born from learning about a truly moving story unfolding in the heart of Florida’s tomato fields, an area responsible for supplying an astounding 90% of our country’s offseason tomatoes. For far too long, the Immokalee region was tragically known as “ground zero” for modern-day slavery, a stark reality described by Chief Assistant US Attorney Douglas Malloy. The accounts of human rights abuses in these fields are heartbreaking, making it even more devastating to realize this was happening right on American soil.

However, the narrative has shifted dramatically, thanks to the tireless dedication of remarkable individuals and organizations. Over the past 15 years, more than 1,000 people have been liberated from conditions of forced labor in the Florida tomato fields. This monumental achievement is a testament to the power of collective action. What’s even more inspiring is that the tomato farmers themselves have actively participated in developing the groundbreaking Fair Food Program. This pioneering program establishes a zero-tolerance policy against slavery, child labor, and various forms of abuse, setting a new standard for ethical agriculture.

The success of the Fair Food Program has been widely recognized and adopted by numerous major players in the food industry. Fast-food giants and leading grocery retailers, including Whole Foods and Trader Joe’s, have proudly endorsed this initiative. This widespread support is incredibly exciting, demonstrating a growing commitment across the industry to fair labor practices and responsible sourcing. It transforms how we view the journey of our food, from farm to fork.

It’s easy to feel disconnected from such issues, especially when they seem far removed from our daily lives. Yet, the reality is profoundly different: every time we purchase offseason tomatoes, we become part of this ongoing story. When I envision these dedicated farmers, similar to the honest, hardworking individuals I meet at my local market, and imagine their transition from perilous working conditions to a secure, supportive environment where they receive fair compensation for their labor, the issue becomes intensely personal and tangible. The advancements achieved are not just statistics; they are a profound reason to celebrate human dignity and progress!

The Magic of Slow-Roasting: Unlocking Deep Flavors

Now, let’s turn our attention back to the star of our dish: the slow-roasted tomatoes and garlic. This technique is a culinary game-changer, transforming simple produce into intensely flavorful components that elevate any meal. Unlike quick sautéing, slow-roasting at a low temperature allows the natural sugars in the tomatoes to caramelize gradually. Simple ingredients combine to make an absolutely delicious slow-roasted tomato and garlic pasta, bursting with fresh flavors and rich aromas. This healthy and satisfying Italian dish is perfect for any occasion!

  • 3-4 cups cherry or grape tomatoes, each sliced in half lengthwise (a vibrant mix of red and yellow tomatoes adds visual appeal and subtle flavor variation)
  • 1 head garlic, separated into individual cloves (unpeeled)
  • 2 Tbsp. extra virgin olive oil
  • Generous pinches of sea salt and freshly-cracked black pepper
  • 1 lb. (16 oz.) dried pasta (spaghetti, linguine, or fettuccine work beautifully)
  • 1 cup loosely-packed fresh basil, thinly sliced or chopped
  • 1 cup freshly-grated Parmesan cheese (use high-quality Parmesan for the best flavor)
  • 1/2 cup toasted pine nuts, for garnish (optional, but adds a wonderful crunch and nutty note)

Instructions

  1. Prepare for Roasting: Preheat your oven to a low 250 degrees F (120 degrees C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Slow-Roast Tomatoes and Garlic: Arrange the halved cherry or grape tomatoes and the unpeeled garlic cloves in a single layer on the prepared baking sheet. Ensure they are spread out and not overcrowded, which allows them to roast rather than steam. Drizzle generously with 2 tablespoons of olive oil. Season liberally with salt and freshly-cracked black pepper. Roast for 2 1/2 to 3 hours, or until the tomatoes have visibly shriveled, concentrated their juices, and the garlic cloves are tender and golden. They should still be slightly juicy and not completely dried out. Remove from oven and set aside to cool slightly.
  3. Cook the Pasta: Approximately 30 minutes before your tomatoes and garlic are ready to come out of the oven, bring a large pot of generously-salted water to a rolling boil. Adding salt to the pasta water is crucial for flavoring the pasta itself. Add the dried pasta and cook according to package instructions until it is al dente (cooked through but still firm to the bite).
  4. Combine and Serve: Drain the cooked pasta thoroughly. Transfer it back to the large pot or a spacious serving bowl. Gently squeeze the roasted garlic cloves from their skins directly into the pasta; they should slip out easily and be incredibly soft and sweet. Add the slow-roasted tomatoes and the fresh, thinly sliced basil to the pasta. Toss everything together until well combined, allowing the warmth of the pasta to slightly wilt the basil and meld all the flavors.
