  • 1 (4 ounce) can Old El Paso diced green chiles, undrained
  • 1 (15.5 ounce) can black beans, thoroughly rinsed and well-drained
  • ½ cup whole-kernel corn (frozen or canned, drained)
  • 1 (8-count) package Old El Paso large flour tortillas
  • 3 cups Mexican-blend shredded cheese
  • 1 ¼ cups red enchilada sauce, either homemade for best flavor or Old El Paso brand
  • ½ cup BBQ sauce, preferably homemade Kansas City style or your favorite store-bought brand
  • Optional toppings for serving: ¼ cup chopped fresh cilantro, extra diced red onions, sour cream, or avocado slices.

Instructions

  1. Preheat your oven to 350 degrees F (175°C).

Incorporate the diced chicken and diced green chiles, then generously season the mixture with salt and pepper. Continue to sauté for 6-8 minutes, stirring frequently, until the chicken is thoroughly cooked through and no longer pink. Stir in the rinsed black beans and corn until all ingredients are well combined and heated through. Remove the skillet from heat and set the chicken mixture aside.
  3. In a separate medium-sized bowl, whisk together the red enchilada sauce and the BBQ sauce until both are thoroughly combined and the mixture is smooth. Set this flavorful sauce aside.
  4. To efficiently assemble the enchiladas: Lay out a single flour tortilla on a clean, flat work surface. Spread about two generous tablespoons of the prepared sauce mixture evenly over the entire surface of the tortilla. Place a few spoonfuls of the chicken and vegetable mixture down the center of the tortilla, creating a substantial filling. Sprinkle generously with approximately ⅓ cup of the shredded Mexican-blend cheese. Carefully roll up the tortilla tightly and place it seam-side down into a lightly greased 9×13-inch baking dish. Once all enchiladas are neatly arranged, pour the remaining sauce mixture evenly over the tops of the rolled tortillas, then sprinkle with the rest of the shredded cheese, ensuring even coverage.
