This method is undeniably delicious, but let’s be honest, who always has leftover tortillas on hand? My pantry, however, is almost perpetually stocked with corn tortilla chips. And so, an idea was born: why not use crumbled chips instead? This simple swap has transformed an already easy recipe into an absolute breeze, making it accessible for any day of the week, whether you’re a seasoned cook or just starting your culinary adventures.

  2. Heat olive oil over medium-high heat in a large sauté pan. Add the diced onion and chopped jalapeño and sauté for 5 minutes, stirring occasionally, until the onion is soft and translucent. Add the minced garlic and sauté for 1-2 additional minutes, stirring occasionally, until the garlic is fragrant.
  3. Add the egg mixture to the pan and reduce heat to medium. Cook for 5-6 minutes, stirring frequently with a spatula, until the eggs are completely scrambled to your desired consistency.
  4. Stir in the crumbled tortilla chips, salsa, and shredded cheese. Cook for 2 minutes, stirring occasionally, until the cheese is melted and the ingredients are warmed through. Taste and season with extra salt and pepper if needed.
