  • 2 red bell peppers, cored and cut into bite-sized pieces
  • 2/3 cup cashew halves, for texture and garnish

  • For serving: fluffy rice**, quinoa, or warm homemade naan
  • Garnishes: fresh lemon wedges, finely chopped fresh cilantro leaves, extra crushed cashews (optional)
