Sprinkle slightly less than 1 teaspoon of the prepared rub evenly over the top of each pork chop. Gently pat or rub the spice mixture into the meat, ensuring a good coating. Flip the pork chops over and repeat the process on the other side. Let the seasoned pork chops rest for about 5-10 minutes at room temperature to allow the flavors to meld and the rub to penetrate slightly. Just before cooking, season both sides generously with sea salt and freshly ground black pepper.
