  • 4 oz. soft goat cheese (chevre), plain or herbed, at room temperature
  • 3 Tbsp. milk or light cream (dairy or non-dairy alternatives work too)
  • 2 cups fresh baby arugula, washed and dried
  • pure honey, for drizzling (local honey is a great choice!)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil for easy cleanup.
  2. In two separate mixing bowls (to prevent color bleed if using mixed beets), toss each color of the diced beets with 1 tablespoon of olive oil. Spread each color of beets in a single, even layer on separate halves of the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the beets are tender when pierced with a fork and slightly caramelized. Remove from oven and set aside to cool slightly.
  3. Reduce the oven heat to 350°F (175°C). Arrange the sliced bread in a single layer on a clean baking sheet. Bake for 10-15 minutes, or until the bread slices are golden brown and perfectly toasted. Remove from oven and let cool completely on a wire rack.
  4. While the beets and bread are cooling, combine the softened goat cheese and milk (or cream) in a small bowl. Whisk vigorously until the mixture is well-blended and smooth. For a thinner, more easily spreadable consistency, you may add a touch more milk, a teaspoon at a time.
  5. To assemble your crostini: Spread a generous dollop of the creamy goat cheese mixture onto each piece of toasted bread. Notes

To save time, you can also bake the baguette slices in the oven while the beets are roasting. Just be mindful to keep a very close eye on the bread, as it will toast much more quickly at the higher 425°F temperature and can burn easily. Alternatively, consider using pre-roasted beets (available in some grocery stores) or even pre-made crostini shells for an even quicker assembly!
