- In a separate, smaller bowl, mix together the wet ingredients: mashed very ripe bananas, lightly beaten large egg, melted coconut oil, melted peanut butter (or your preferred nut butter), and vanilla extract. Whisk until smooth.
- Pour the wet ingredient mixture into the large bowl with the dry ingredients. Mix until just combined, being careful not to overmix the dough. Gently fold in the chopped dried figs (or other dried fruit) and dark chocolate chunks or chips until they are evenly dispersed throughout the dough.
