To Make The Filling:

  1. While the crust is baking, prepare your filling. Combine fresh mint leaves and lime juice in a shaker or a sturdy glass. Use a muddler (or the end of a large wooden spoon) to gently muddle the mint into the lime juice. This releases the essential oils and flavor of the mint. Then, strain the infused lime juice into a clean bowl, discarding the spent mint leaves.
  2. In a separate mixing bowl, whisk together the sweetened condensed milk and large egg yolks until they are thoroughly combined and smooth.
