In a separate heavy-bottomed pot or Dutch oven, heat the extra-virgin olive oil over medium heat until it shimmers but does not smoke. Add the minced shallot and sauté for approximately 4 minutes, stirring occasionally, until the shallot turns tender and translucent, releasing its aromatic fragrance. Next, add the Arborio rice to the pot and stir it thoroughly to coat each grain with the oil. Continue to cook for 3 minutes, stirring frequently to lightly toast the rice. Pour in the dry white wine and cook, stirring constantly, until all the wine has been completely absorbed by the rice. This step is crucial for adding depth of flavor.
  2. Now, embark on the meditative process of building your risotto. Continue cooking the rice, gradually adding the warm chicken stock, about 1/4 cup at a time (a ladle works perfectly for this).
