  • half an avocado, peeled, pitted and diced
  • chopped fresh cilantro for garnish
  • crumbled cotija cheese for garnish

  1. Heat olive oil in a medium non-stick sauté pan over medium-high heat. Add the sliced jalapeño and diced red onion and sauté for about 3 minutes, stirring occasionally until softened and fragrant. Stir in the minced garlic and halved grape or cherry tomatoes, continuing to sauté for another 3 minutes until the tomatoes begin to soften. Season generously with a pinch of salt and freshly ground black pepper to taste. Once cooked, transfer this flavorful vegetable mixture to a separate plate and set aside.
  2. Return the same pan to the stove, reducing the heat to medium. If your pan seems dry, you may add a very small amount of additional oil or mist it with cooking spray to prevent sticking.
