  • 1/2 cup vegetable broth (or chicken/beef broth, or water for lighter flavor)
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons corn starch (helps thicken the sauce)
  • 2 teaspoons ground ginger (for that essential zesty kick)
  • 1/4 teaspoon freshly-ground black pepper

Stir-Fry Ingredients:

  • 1 lb. thinly sliced flank steak or sirloin, cut diagonally across the grain into thin strips (ensures tenderness)
  • 2 garlic cloves, minced (freshly minced offers the best flavor)
  • 2 tablespoons olive oil (or a high-smoke point oil like avocado or grapeseed oil)
  • 8 ounces baby portobello or button mushrooms, halved
  • 4 ounces shiitake mushrooms, halved (for deep umami flavor)
  • 3 cups chopped kale (stems removed, roughly chopped)
  • 2 green onions, thinly sliced (for garnish and fresh onion flavor)


Instructions

To Make The Marinade:

  1. Add all marinade ingredients (soy sauce, vegetable broth, rice wine vinegar, corn starch, ground ginger, and black pepper) to a bowl and whisk thoroughly until well combined and the corn starch is fully dissolved. Pour the prepared marinade into a large bowl or a sturdy ziplock bag. Add the thinly sliced steak to the marinade, ensuring all pieces are gently tossed and coated. Cover the bowl or seal the bag, then refrigerate for a minimum of 15 minutes to allow the flavors to meld and the beef to tenderize.

To Make The Stir-Fry:

  1. Once the steak has marinated, heat 1 tablespoon of olive oil (or your preferred high-smoke point oil) in a large saute pan or wok over medium-high heat until shimmering. Carefully remove the steak from the marinade using a slotted spoon, making sure to reserve the remaining marinade in the bowl for later use. Add the marinated steak and minced garlic to the hot pan. Saute for approximately 2-3 minutes, stirring occasionally, until the beef is beautifully browned and cooked to your desired doneness. Remove the cooked steak from the pan with the slotted spoon and set it aside on a plate.
