Coconut Lime Shortbread Cookie Ingredients:

  • 1/2 cup shredded coconut, toasted
  • 1/2 cup granulated sugar
  • 2 tablespoons lime zest
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup (2 sticks) cold butter, cut into 1-tablespoon pieces

Lime Glaze Ingredients:

  • 2 cups powdered sugar
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 23 tablespoons water

Instructions

To Make The Coconut Lime Shortbread Cookies:

  1. Preheat oven to 325°F (160°C).
  2. In a food processor, combine the toasted shredded coconut, granulated sugar, fresh lime zest, and vanilla extract. Pulse a few times until the coconut is finely chopped and the ingredients are well incorporated. Add the all-purpose flour, and pulse again until just combined. Gradually add the cold butter pieces, pulsing until the mixture appears smooth and cohesive. The dough might seem somewhat dry at this stage.
  3. Transfer the dough to a very large bowl and knead gently until it comes together into a smooth ball. If the dough still feels too dry or crumbly, add a half teaspoon of water at a time, kneading after each addition, until it just clings together. Shape the dough into a ball, then divide it in half.
  4. On a lightly floured surface, roll out one portion of the dough to an even thickness of about 1/4-inch. Using your preferred cookie cutters (a 1.5-inch round cutter works wonderfully for classic shortbread), cut out the cookies. Carefully place the cutouts about 1 inch apart on an ungreased cookie sheet.
  5. Repeat this process with the remaining half of the dough on a second cookie sheet, ensuring you don’t overcrowd the sheets.
  6. Bake for 15-17 minutes, or until the edges and bottoms of the cookies begin to turn a very light golden brown. It’s important not to overbake shortbread to maintain its tender texture. Transfer the baked cookies to a wire rack and allow them to cool completely to room temperature before glazing.
  7. Once cooled, drizzle each cookie generously with the prepared lime glaze. For an extra pop of color and intense lime aroma, sprinkle additional fresh lime zest on top of the wet glaze, if desired.

To Make Lime Glaze:

  1. In a small mixing bowl, whisk together the powdered sugar, lime zest, and fresh lime juice until well combined and smooth. Gradually add two to three tablespoons of water, whisking continuously, until the glaze reaches a smooth, pourable, yet thick enough consistency for drizzling or spreading.
